Peanutty Peanut Butter Bars – FIXATE

I think its safe to say that not many people will be surprised to see that the¬†first recipe I tried from FIXATE was in the dessert section and loaded with some all natural PB ūüėČ

There’s so many amazing recipes in this book ranging from Gluten Free to Paleo to Vegan and Vegetarian but after falling one ingredient short for the chocolate chip cookies I opted for this peanutty goodness!!

Peanutty Peanut Butter Bars (recipe from the FIXATE cookbook)

Makes 16 servings, Each serving is 1 YELLOW and 2.5 TSP

WHAT YOU NEED:

1 1/2 cups all natural smooth peanut butter

1/2 cup raw honey (or pure maple syrup)

2 tsp pure vanilla extract

2 large eggs (at room temperature)

1/2 tsp baking soda, gluten free

WHAT YOU NEED TO DO:

1. Preheat oven to 350F

2. Lightly coat 8×8-inch baking pan with spray. Set aside

3. Combine peanut butter, honey, extract, eggs, and baking soda in a large bowl; mix well

4. Evenly spread batter into prepared pan. Smooth top with a spatula.

5. Bake 20 to 23 minutes. Squares may be a little soft when coming out of the oven, but they will continue to cook.

6. Cool. Cut into squares.

I’ll be honest – these are one of the best “healthy/clean” treats I’ve ever made! And coming from a chocoholic – I can tell you I’ve tried A LOT of different recipes. Its sweet, but not too sweet. Has a bit of a cake-like consistency and its clean and 21-day fix approved!

Definitely a win in my book!!!

Gluten Free Sweet Potato Brownies

I usually spend my Sundays with my family using nap time to meal plan and grocery shop for the upcoming week however I found myself with a quite a bit of produce leftover from the week on the verge of going bad. I don’t use the word “hate” very often but I really truly HATE wasting food!!!

Top of my must use list: 2 baked sweet potatoes and quinoa!

Using the two sweet potatoes was a pretty easy decision! I had remembered seeing a brownie recipe a while back and this seemed like the perfect opportunity to give it a try!!! My hubs has recently gone gluten free so I wanted to make sure it was something the entire family could enjoy!

Sweet Potato Brownies (Gluten Free)

WHAT YOU NEED:

  • Maegan Blinka, Meal prep Sunday, gluten free brownies, dairy free brownies, sweet potato brownies, healthy treat, healthy dessert, quinoa brownies, 1 Large or 2 small sweet potatoes
  • 3 eggs, whisked
  • 1/4 cup unrefined coconut oil, melted
  • 1/3 cup honey
  • 1/2 tsp vanilla extract
  • 3 TBSP Cooked Quinoa*
  • 3 TBSP Unsweetened Cocoa Powder
  • 1/2 tsp cinnamon
  • 1/4 tsp baking powder
  • dash of salt
  • 3/4 cup chocolate chips

*I had leftover quinoa in my fridge. You could also use quinoa flour or coconut flour as a substitute

WHAT YOU NEED TO DO:

  1. Bake your sweet potatoes (or if you’re like me use leftover ones!), peel skin and let cool
  2. Heat oven to 350 degrees
  3. Mash sweet potatoes and add: eggs, coconut oil, honey, vanilla
  4. Add dry ingredients: quinoa, cocoa powder, cinnamon, baking powder, salt and mix well
  5. Stir in chocolate chips
  6. Pour into 8×8 glass baking dish and bake for 30 minutes.

If you have a little helper like me that’s an extra bonus!

My only advice – Try not to eat the entire pan! I had 1/4 of the pan gone within minutes and had to hide it from myself in the microwave!

Black and White No-Bakes

So I made the nutty shakeology no bakes a while ago and thought they were a great alternative to regular cookies. I took them to a family reunion and people were amazed to see that they were all natural “healthy” cookies. So when my mom asked me what I wanted for my birthday I quickly responded with the no bake cookies! I’ll admit – my mom got to my house late in the evening and I quickly ate 4 cookies. I couldn’t believe how delicious they were – so much better than mine!!! I thought it was just because my mom made them but nope – she did something differently – she melted the PB and honey first and she did half chocolate and half vanilla shakeo – and oooooooo what a difference!!! I’m not sure if its a good thing yet or bad thing because I cannot stop eating them but I feel obligated to share!

I was even able to return the favor and as my mom prepped for her first marathon this past weekend I asked her what I could provide to help her – and of course she wanted the no bakes!!! I was happy to hear these little bites help provide her energy as she powered through her 26.2 miles! I still don’t think they were as good as my moms…but they did the trick!

Black and White Shakeology No Bakes

(Makes 30-32 servings, 1 Cookie each)

Total Time: 15 min

Prep Time: 10 min

Cooking time: 5 min

WHAT YOU NEED:

  • 1 Scoop Chocolate Shakeology
  • 1 Scoop Vanilla Shakeology
  • 1 cup all natural peanut¬†butter
  • 1/2 cup peanuts
  • 1 cup quick-cooking rolled oats
  • 1/2 cup honey

WHAT YOU NEED TO DO:

  • MELT PEANUT BUTTER AND¬†HONEY IN A MEDIUM SAUCEPAN.
  • AND SHAKEOLOGY ¬†THEN OATS AND MIX WELL WITH A RUBBER SPATULA OR WOODEN SPOON.
  • SCOOP¬†MIXTURE INTO 1-INCH SIZE BALLS (I FOUND THE PAMPERED CHEF SMALL COOKIE SCOOP TO BE A HUGE TIME SAVER HERE).
  • FLATTEN EACH BALL SLIGHTLY SO THAT IT IS SHAPED LIKE A TRADITIONAL COOKIE. AND THAT’S IT!
  • ENJOY ūüôā
Optional: Roll cookie in crushed nuts, whole-grain graham cracker crumbs, or unsweetened coconut flakes
My advice – keep these in the freezer! This way you have to pull them out and let them sit for a few minutes before eating. It may help reduce eating them all at once!!!

Caramel Apple Shakeology

Caramel apple Shakeo

Fall may not have officially started but the leaves are changing, football is in full force and there are pumpkins everywhere! My husband was pushing for an Apple Pie blizzard from Dairy Queen but my lack of self control told me one quick trip through the drive through and the chance of me leaving with only one in hand was slim. So I started thinking of a¬†late night snack¬†that would¬†fill his void for ice cream and keep my goals in tact…and this happened…

Caramel Apple

*8oz of liquid (I used unsweetened almond milk but you could also use water, or a combo of milk and water)

*1 Scoop VANILLA Shakeology

*1/2 of a green apple, sliced

*1 tsp caramel extract

*Lots of ice!!!!

Blend until smooth and enjoy!!!

NOTE: I like to eat mine with a spoon, so I always fill with about 8-10 ounces of ice and “crush ice” on my blender fist then hit the “mix” for about 30 seconds. It comes out thick and smooth – just like ice cream but without all the added stuff!!!!
