Chopped salad

Its been 5 days of MAKING THE SHIFT with the new program SHIFT SHOP and I gotta say-feeling like a brand new baby challenger again just starting out has me feeling all the feels!!!

When I committed to the 21-day fix over 3 years ago i was 100% COMMITTED – following my meal plans, measuring my foods, avoiding the temptations and just staying focused. Once I met my “goal weight” I got more lenient.

Arguably –  Rightfully so…but then I got comfortable. And 2 pounds here and 3 there started to add up.

And while my focus is not on the scale and more so on how I FEEL it was rippling into other areas and I am PROUD to say I AM BACK IN MY GROOVE!!!

One thing I used to have DAILY was a salad for lunch. I’m not talking plain chicken and lettuce. A loaded, filling, FUN and different salad to help me get in the greens and really fuel up on good foods and with salads a part of the daily lunch plan in week 1 of SHIFT SHOP – I fell back into where I started.

chopped salad.jpg

WHAT YOU NEED:

  • 1 cup romaine/spinach
  • 1/2 cup carrots
  • 6oz grilled chicken (rotisserie also works well!)
  • 1/2 cup steamed edamame
  • 2 tbs almond slivers
  • Dressing of choice

(If you’re following the Shift Shop meal plan or Portion Fix nutrition system this would be: 1.5 greens, 1 red, 1 yellow, 1/2 blue, 1 orange)

Optional:

  • Strawberries
  • Tomatoes
  • Red peppers
  • Avocado

WHAT TO DO:

Combine the lettuce/spinach, carrots and chicken in a large bowl and chop (I find using the Pampered Chef Salad Choppers makes it a BREEZE!!!)

Add any additional toppings and dressing. Continue to chop

Top with almonds and edamame and ENJOY!!!

Health-IER Loaded Nachos

I LOVE finding ways to CLEAN UP old favorites in a way to enjoy – without feeling gross after the fact.

Loaded nachos.jpg

This was PERFECT.

We simply utilized some of the prior week’s leftovers to come up with one heck of a mouth watering Game Day snack!!

(serves 2)

What you need:

  • 2 Cups Unstuffed Pepper Soup
  • 12-15 Tortilla chips
  • 1/2 Avocado
  • Jalopenos – lots and lots of jalopenos
  • Extra Napkins!!!

What to do:

Layer up the goodness (warm up the soup if you’re using leftovers like me!!) go to town, prepare to get messy and ENJOY!

NOTE: I prepared this using leftover unstuffed pepper soup. You could always make fresh! I wanted to include as many veggies as possible while still enjoying this delicious family favorite! It was a total win in our book and a great way to watch the kickoff on a beautiful Fall Sunday afternoon!

For my Portion Fix fans: I counted as one YELLOW, one RED, one BLUE and 1/2 a GREEN. I popped a few pieces of broccoli to round out a full green serving!

Back to School Back to YOU

Back to school 2016 banner.jpg

For now and for the next 14 or so years…August is going to be synonymous with the summer wind down and back to school!

This means a lot of different things to many of us.

For me – this year- it’s the start of Preschool for my son, Kindergarten for my daughter, Soccer practice, gymnastics, swim lessons, work travel, team trainings and more.

There are so many areas in life that I could come up with excuses as to why I don’t have time to exercise or eat healthy.
They are all legitimate excuses too…

*I was up all night dealing with night terrors
*My 3 year old decided potty training was for the birds
*The lack of a summer schedule is creating little monsters at bedtime as we prepare for the next transition
*I don’t have time to eat healthy
*I don’t have money to eat healthy
*I’m traveling
*My husband is traveling…
And the list goes on and on and on…

But here’s the deal – those are all just EXCUSES. And I’ve learned through experience…you can have EXCUSES or RESULTS – but not both!

i lost my excuses when I found my results.PNG
From Day 1, these 30 minutes I give myself have been what allow me to give to others.

Its not selfish to make time for a 30 minute workout and my goal is to teach you HOW I do it and have consistently done it to turn it into a balanced, sustainable LIFESTYLE.

If you’re ready to toss the excuses and you’re looking for RESULTS then I invite you to my next challenge group – BACK TO SCHOOL BACK TO YOU!!!

And if you’re worried about eating “rabbit food” – forget that one too…You will not be hungry!!!

We will begin on August 22nd and enrollment is open now!

If you’re already anticipating those busy weeknights with homework, after school practices, early weekend games and are thinking there’s no way you’re going to be able to squeeze in some “ME” time – then I ask that you accept this challenge!

Allow me to help you with your meal planning, toss in some new crockpot ideas, focus on the prep work and figuring out just how 30 minutes can be found in every day through our online support group!

Turkey & Sweet Potato Hash

Now this is a recipe that will be making its way back to the meal plan again!!!

Obtained from the Country Heat nutrition guide – this was a family hit!

Simple, clean, gluten free and full of flavor!

Maegan Blinka, Megan Blinka, Gluten Free, Turkey and Sweet Potato Hash, Gluten free fix approved recipe, Sweet Potato recipe, One pot weeknight meal idea, comfort foods, Country Heat nutrition guide, Country Heat Meal Plan

Container Equivalents (per serving, per Country Heat nutrition guide): ½ GREEN – 1 YELLOW –  1  RED – ½ teaspoon***

WHAT YOU NEED:*

  • 2 tsp. olive oil
  • 1 medium onion chopped
  • 1 medium green bell pepper, chopped
  • 2 medium sweet potatoes, peeled, chopped
  • 1 lb. raw ground 93% lean turkey breast
  • 2 cloves garlic, finely chopped
  • 1½ tsp. finely chopped fresh thyme (or ½ tsp. dried thyme)
  • Sea salt (or Himalayan salt) and ground black pepper (to taste; optional)

WHAT YOU NEED TO DO:**

1. Heat oil in medium skillet over medium-high heat.

2. Add onion, bell pepper, and sweet potatoes; cook, stirring frequently, for 8 to 10 minutes, or until onion is translucent and sweet potato is tender-crisp.

3. Add turkey; cook, stirring frequently, for 5 to 6 minutes, or until turkey is cooked through and sweet potato is soft.

4. Add garlic and thyme. Season with salt (if desired) and pepper (if desired); cook, stirring frequently, for 1 minute.

——————————————-

* I doubled this recipe. I love green peppers and onions so I added 3 of each yet instead of doubling the sweet potatoes I only did 3 of those.

** My pan was not big enough for the double recipe so I actually cooked the veggies in one pan and the turkey in another and then combined and simmered the last few minutes.

*** Note: The serving size provided was 3/4 cup for the containers listed above providing 4 servings – however I found my recipe when it was said and done to have nearly 1.5 cups for 4 servings yielding 1 yellow, 1 green and 1 red. Use your best judgement!

Stripped Clean Eating Challenge

change vs stay the same quote.PNGLet’s pause for a minute…

Think about that.

Do you want to make a change?

Or

Stay the same.

Are you READY-emotionally and physically for that CHANGE?

Change isn’t easy. It can be hard. There can be moments of doubt. But my goodness when you reach that goal it feels pretty darn amazing.

motivation fail quote.png

Let me share for a minute my moment when that desire to change finally outweighed my desire to stay the same…

I was 3 most post-partum with my second child. I was 27 years old, holding on to about 5 or 7 ‘extra’ pounds at that point and down right – EXHAUSTED (what mom of an infant isn’t?!?!)

For the longest time I just thought new moms were supposed to be tired all the time…but then I realized…

It just didn’t seem right.

I was young, a stay at home mom of 2 and I wasn’t overweight. I had all these “things” i wanted to do with my kiddos and around the house and being EXHAUSTED wasn’t really an option. Not anymore!

But I am no fool.

I knew the problem.

i lost my excuses when I found my results

It was my nutrition and lack of ANY type of exercise was the root of the cause…

So I took the plunge and  made the commitment to change all the things that I knew were bringing me down and low and behold…I FOUND MY RESULTS.

Sure, the portion containers were intimidating at first. I had never measured ANYTHING.

I was a bit reluctant to think there was really a program out there that could help you lose “up to 15 pounds in 21 days”.

And don’t get me started on the hesitations to Shakeology – I thought it was crazy expensive and truly expected a chalky milk drink!

But like I said, I was ready to make that commitment. So I pushed the doubts aside and jumped in…all IN and I have never looked back!

My passion, my business and a huge part of my life has become helping other women – and other moms – find what I was looking for 2 years ago.

To find that solution to a problem, to support others in their journey, to guide them and teach them so they too know just how amazing their bodies are designed to feel when treated right!

my 21 day fix results

So let me go back to how I started this post…

Does YOUR desire to change outweigh your desire to stay the same?

If the answer is maybe or I think or perhaps, then I can’t help you right now…

BUT – If the answer is Heck to the YES then read on…

Because I am so excited to announce my first ever STRIPPED Clean Eating Challenge.

Stripped Challenge challenge group ad.jpg

This group will be different from others in that we will be focusing on those specific foods that are holding you back from reaching your own goals!
You will have the option to pick your workout program and I will help you find the one right for you!
And yes – that chalky milk that I was so afraid of in the beginning – you’ll be trying that too! Because, well, in all honesty I couldn’t have been more far off on how amazing that superfood meal replacement shake truly is!!!!
We will go through goal setting and we will start and end our group – TOGETHER!!!
At the the end of our 21 days together  you will also have the option to also do the 3 day refresh to get the best results possible.
And don’t worry – I will be in the trenches with you! I have our annual beach vacation on the horizon and my best friends wedding later this summer! Not only do I want to look my best – but I want to FEEL my best too! I am going to be BUSY!
So if you’ve made it this far I am thinking you just may be at that point too! That point where your desire to change outweighs your desire to stay the same – so let’s do this!!!
If you’re ready to DROP 10 – Fill out the form below to be considered for 1 of my 10 spots.

Banana Oat Muffins

Sometimes as you come down the homestretch of a workout program you just need to kick it up a notch!

22 Minute HC Meal Plan week 6.jpg

I’m in the midst of week 6 of the new Bootcamp style program 22 MINUTE HARD CORPS and week 2 of my Bikini Bootcamp. But if I’m being real with you all…I have an untamable sweet tooth!!!

Ok – so its kind of tamable – BUT I love when I can find clean alterntives to old favorites and that’s exactly what I got with these muffins!

WHAT YOU NEED:

-2 ripe bananas
-2 cups oats
-1 tsp baking soda
1/2 tsp baking powder
-2 eggs
-1.5 tsp vanilla
-1 tsp cinnamon
-dash of Himalayan sea salt
-1 1/4 cups plain Greek yogurt
-Chocolate chips, nuts, sprinkles, and pirate flags at your own discretion 😜

WHAT YOU NEED TO DO:

Blend all ingredients together (I had to stop and stir about 3x)

Pour into 12 (lined) muffin tins

Bake at 350 for 30 minutes

Enjoy!!!

Banana oat muffins with recipe and website

Now I will admit – these were not on my Bikini Bootcamp meal plan…initially…however as you can see form the list above (minus the chips & sprinkles) this is totally clean!

The container equivalents were close to my Mancakes – which include a combo of oats, egg/egg whites and fruit…as does the above with some greek yogurt as well.

The more I thought about it this made 12 muffins.

The ingredients included 4 “purples” – 4 “yellows” – (almost) 3 “reds”

Sometimes the “fix portion breakdown” doesn’t quite line up exactly but my estimate is 3 muffins would yield you 1 Purple, 1 yellow and 1 red not counting the sprinkle of chocolate chips!

Whether you’re new to clean eating or a seasoned pro – if you’re interested in more ideas, recipes, meal plans, motivation to stick to it or any other information fill out the form below to join one of my upcoming 21 day health and fitness accountability and support groups!
