Back to School – Back to the Basics

Do you feel like it was a quick blink of the eye and all of a sudden summer is over?     
Its hard to believe we are down to our last week of August.

This summer, as with summers past, has flown by! And as much as I’d like to say I stuck to my routine and kept up with my health and fitness goals I cannot. One by one things have gotten away from me and while I can’t say I completely fell off the wagon I have been dangling on the side more times than I would like to admit!

It started with our Success Club trip to Cancun in April, then it was my little guy’s second birthday, and then a few trips, a wedding here, a baby shower there, my little girl’s 4th birthday, the building of our new home, packing up, moving, tossed in with some weekend get togethers, and before you knew it we were ordering chinese, and pizza on a regular basis and making all too frequent trips post-dinner for some fro-yo bowls!

As a result, I haven’t been able to get up in the morning when I want to, I find myself tired in the afternoons and less productive which in turn makes me short with the kiddos and frustrated with myself. I don’t like that my once lose and comfortable shorts barely button and the confidence is slowly decreasing.

I mean it happens – I get it – but I don’t exactly like it and I have the power to change it.

My 80/20 goal has been more like a 60/40 reality but the one positive that is staring me in the face:  I know EXACTLY what I need to do to succeed and what I need to do to get back to where I was.

  • I know what works for me.
  • I know how much the accountability of my challenge groups WORKS.
  • I know preparation is the first step towards success.
  • I know that if I follow the 21-day fix portion containers I WILL get RESULTS.
  • And I know once I go a few days without the processed junk and added sugars the cravings will be gone with the help of Shakeology.
  • I already know all this its just time to COMMIT and follow through!

My meal plan for the week is set and I’ll be grocery shopping tomorrow and the hubs is on board!

Clean Buffalo Chicken Dip

Ready or not Summer is winding down and Fall is just around the corner!

I don’t know about you but when I think of fall I think of Back to school, Football, Apples, Festivals, tailgating, get togethers and really good FOOD! And as much as I like good food – I also love CLEAN & Healthy foods and anytime I can take an old favorite with a healthy twist I AM IN!

After a summer full of grilling I have dusted off my crockpot and I am ready for some new soups and easy meals that get tossed together in the morning and are ready to eat come dinner time!

I see this becoming a staple in our house – its easy to make – easy to make A LOT of – and its so versatile!

WHAT YOU NEED:

  • 1 pound chicken
  • 1 cup plain greek yogurt
  • 1/4 cup hot sauce (more or less depending on your preference)
  • 1 TBS minced garlic
  • 1 sliced onion (optional)
  • 1/4 shredded cheddar cheese (optional)
  • Banana Peppers (optional)

WHAT YOU NEED TO DO:

Toss all items into the crockpot – cook on low 6-7 hours and shred when complete! And yes – that’s IT!

  • As a salad – in a mix of romaine and spinach with some cherry tomatoes. The chicken is so juicy – no dressing needed in my opinion
  • Pizza topping – Again – I am digging the combo with banana peppers but think some additional hot sauce would be good and cheese so its more “like pizza”
  • Open faced sandwich – easy enough! 
  • Over pasta – this was my munchkins preference
  • By itself

Side note – the picture with the sliced tomatoes was a time when I had more than 2 pound of chicken and not quite 2 cups of yogurt. It was more of a shredded chicken than a ‘DIP’ but if you use the yogurt identified above for the amount of chicken you have it will be creamier.

And to answer the thought I am sure you have —- No – you cannot taste the yogurt aspect at all!!!

Beachbody Coaching – its more than a job – its a PASSION

And yes, I could go on and on and on!

I spent last weekend on a Diamond Retreat in the PocoFitness group photo shoot idea, Fitness inspiration, Maegan Blinka, Megan Blinka, Poconos golf course, Weekend getaway, Girls weekend trip, nos with some fellow Diamond coaches. While arguably this was a “work trip” it truly felt just like a girls getaway with a few of my closest friends. The crazy part – this was the first time some of us had EVER met.

Yet our social media businesses allow us to feel like sisters. And as I sit here today reflecting on the last year I will say I am beyond blessed that my newly developed PASSION for health and fitness and paying it forward has given me such incredible opportunities but this didn’t happen overnight!

Rewind a few years ago and I had NO IDEA what a Beachbody Coach was. Sure – I had heard of the P90X and Insanity home DVD workout programs but I didn’t know there was a network out there to help others reach their health & fitness goals.

When I found myself post part with Baby #2 I realized it was time for a change. I wanted to be healthy for me & my family. I wanted to have the energy to keep up with my kiddos and I wanted to be leading a healthy lifestyle by example!

When I was FINALLY ready to COMMIT I joined a challenge group with my coach, completed the 21-day fix, got results and NEVER LOOKED BACK! I often think about where I’d be today if I hadn’t reached out to her. If I hadn’t asked for help. If I didn’t realize I could be a better person?!?!?! Regardless…I am grateful!!!

The potential to pay it forward. The potential to help my closest friends and family become the best versions of themselves. The potential to create a full fledge BUSINESS while still being home with my family…and here I am today – 16 months later celebrating the successes of my team!

Our first night ice breaker allowed us to all learn about one another while enjoying some home cooked lasagna dinner…yes Beachbody coaches splurge too and a few of the treats my mini me and I whipped together before heading east.

This weekend was full of inspiration! Learning about how different our backgrounds are yet how we have all taken our own spin on our businesses to make it our own – to be ourselves – to grow a team – and to inspire others that they can do this too!

Our Saturday morning included an outdoor photo shoot complete with team and individual photos as well as indoor professional shots. Watching each of the coaches take their turn and show a little something about themselves was such a cool experience!!!

And as the photo shoot wrapped up we changed pace and headed out to the Lake for a day of Boating! This was pure FUN in the SUN. Tubing and singing and again – just learning about one another and having the chance to bond face to face (opposed to our usual VOXER messages and Zoom calls) was so valuable!!

As our boating ended we headed back to our house, for a low key night complete with a champagne toast and one last chance to celebrate our team and our successes as we spent the night giggling away!

One of my absolute FAVORITE parts about being a Beachbody Coach is being able to share in the success of my challengers! And when I saw this mom of two’s results I immediately asked her if I could share!

The thing that stands out the most from these last 3 months is her COMMITMENT and needless to say her results show it!!!

From the beginning of our challenge group, Kris has been dedicated to her daily stretch/strength/cardio combo and replacing one meal a day with Shakeology!

Gluten Free Chocolate Chip Cookies

Ok – I swear I am going to dive into the FIXATE recipes outside of the desserts but let’s be honest – these just sounded too good to pass up!

SERVINGS: 26 (1 cookie each)

Prep Time: 20 minutes

Cooking Time: 14 minutes

Container equivalents (per serving) – 1.5 yellows

WHAT YOU NEED:

3 cups almond flour

1 tsp. baking soda, gluten free

1/4 tsp. sea salt or Himalayan Salt

1/4 cup extra-virgin organic coconut oil, melted

1/4 cup pure maple syrup or raw honey

1 large egg

2 large egg whites (1/4 cup)

1 tsp pure vanilla extract

1/2 cup semi-sweet or dark chocolate chips

WHAT YOU NEED TO DO:

Preheat oven to 375

Line two baking sheets with parchment paper

Combine almond flour, baking soda, and salt in medium bowl; set aside

Beat oil and maple syrup in a large mixer bowl until creamy, approximately 4-5 minutes

Add egg, egg whites, and extract; beat additional 2 minutes

Add almond flour mixture and mix until blended

Drop rounded TBSP not prepared baking sheet. Flatten cookies with a spatula if desired. Bake approximately 14 minutes or until golden brown.

Store in airtight container.

I have a lot of gluten sensitivities in my family and loved that these were gluten free. I think next time I will try to make my own almond flour and maybe go with the honey over the maple syrup just to see!

Also – I had a mishap with my oven timer and they were slightly overcooked. They tasted fabulous right out of the oven but were a bit crispy for my preference. But that has nothing to do with the recipe and everything to do with my own mistake!!! Oops – lesson learned!

This recipe is from the new cookbook FIXATE, by  Autumn Calabrese. Autumn also created the 21-day fix and 21-day fix extreme workout programs which incorporate 30 minute workouts with a portion controlled nutrition plan. No matter what your age or weight or current athletic ability – anyone can eat right for their body type! She includes a variety of Vegan, Vegetarian, Gluten Free and Paleo recipes.

Just being around some of the best people in this company pushes me and fuels that fire and desire to be at that Elite party again next year!!! Needless to say it was a fun night!!!
But its not all about the fun – there’s some learning in there too!!!
Our Thursday started with a large Dream Team training.
My team is part of the #1 team in all of Beachbody, the Dream Team, and we hosted a Recipe for Success training program on Thursday morning. Talk about a power packed schedule. Two top 10 Elite Coaches and 6 additional Elite coaches sharing THEIR stories, THEIR tips for success and their struggles to help and inspire more to do more!!! I don’t think anyone left that training without a burning desire to Go. Do. MORE!

2015-07-17 08.25.19That evening was also the opening ceremonies which included recognition of a few levels including new 4-star Diamond coaches…ME! Walking across that stage seeing my name on the board – hearing my team mates cheering for me along wit 25,00o other coaches was so surreal.

Ok ok – perhaps its information overload – but let’s just say there’s lots to look forward to!!!
Friday kicked off the training sessions and a very special moment – the Celebrity photo Ops.
I earned this photo session based on the number of people I was able to help towards their health & fitness goals in the month of May and I was beyond excited to to snag a hot spot next to Chalene Johnson, Sagi Kalev and the man behind the hottest new program CIZE – Shaun T!

Trainings filled the day on both Friday and Saturday led by Inspirational speakers, top coaches, and Corporate leaders and celebratory parties filled the nights.

The streets of Nashville were shut down and about 20K coaches gathered on Broadway to SWEAT – sweat for something bigger – those who couldn’t and for one another!!!
And as I take a step back and look I realize that making this short and sweet totally didn’t happen!!! Oops! 🙂

All in all, this trip was absolutely INCREDIBLE – LIFE-CHANGING!
Sometimes I still have to stop and just thank God for this opportunity!
I had dreams of being a big successful executive in a big tall office building in a big city making big bucks.
Then…
I became a mom.
And all I wanted was to be at home with THEM.
But my desire to contribute to my family never left.
This opportunity has given me what I believe is the best of both worlds and I cannot imagine how different my life would be today if I hadn’t taken the leap to become a coach myself!

But still need more greens in your day?

Zucchini chips are to the rescue!!!

While these do take some time to bake, they’re as simple as can be and were truly gone within about 5 minutes after taking out of the oven. Easily a success!!!

*Note to self: double up next time!!!

SERVINGS: 4

PREP TIME: 15 minutes

COOKING TIME: 2 hours

Container equivalents: 1 GREEN, 1/2 tsp

WHAT YOU NEED:

2 large zucchini, sliced thinly

1 TBSP olive oil

1/2 tsp sea salt or Himalayan Salt

WHAT YOU NEED TO DO:

Preheat oven to 225 degrees F

Place zucchini slices in one layer between paper towels to help draw out liquid

Line two large baking sheets with parchment paper

Place zucchini slices on prepared baking sheets

Brush zucchini with oil, sprinkle with salt

Bake for 2 hours, or until golden brown and crispy

Cool completely before serving
