Summer picnic, family get together or JUST BECAUSE…this clean-eats recipe is a fan favorite and makes for a great leftovers on top of grilled chicken!!!

WHAT YOU NEED:

  • 1 red pepper, diced
  • 1/2 red onion, diced
  • I can black beans
  • 1 can shoepeg corn (this is key – its SWEET which adds such a great twist in all the flavors) 
  • Cilantro (as much or as little depending on your preference)
  • 1 packet Good Seasons Italian Dressing mix
  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • Salt and Pepper to taste

WHAT YOU NEED TO DO:

  • Drain and rinse the black beans
  • Drain the corn
  • In a medium bowl, combine dressing mix with oil and vinegar.
  • Add in diced peppers and onion, drained/rinsed corn and black beans and mix well.
  • Add cilantro and salt and pepper to taste and you’re good to go!

You can serve it at room temperature or chill before serving! Make a great appetizer and the leftovers can be repurposed for salad toppings or on grilled chicken!

My imperfectly perfect results from round 1 in the SHOP

Today I am 21 days stronger – mentally & physically – and I found a FOCUS within me that I didn’t know was possible. Shift Shop Round 1 results selfie with text & website.jpg

Being a part of the first Shift Shop test group was such a privilege but I’ll be honest, being surrounded by some pretty amazing people with some jaw dropping, awe-inspiring 21 day transformations left me feeling a little bit like “just another before and after” comparison in the mix.

My results were nothing stellar – 4.7 pounds and 4.25 inches – but as the self-doubt crept in I realized that it was perhaps my GAINS were where I needed to put my focus. Afterall – this was ONLY 21 days.

I am a mom – not a fitness expert.

And you know what – I am healthier, stronger and my kids seem to like the mommy who isn’t asking for an afternoon movie rest time these days…SO I CONSIDER IT A WIN.

I found a way to celebrate, to rid stress, and to ENJOY company – without needing a crutch…a crutch of food. That so often comes with all those situations.

I wasn’t perfect throughout these 21 days but my goodness I tried REALLY hard to stick to the meal plan

  • I enjoyed my son’s birthday cake. But just a slice – at the party – and not the ENTIRE week that followed. And for me – that was a win.
  • And I only had ONE cookie during all of his birthday celebrations. That one cookie was delicious but stopping at 1 is pretty much unheard of for me!
  • I tasted the (leftover birthday) cookie a few weeks later that my daughter said didn’t taste right. With a bite. Then a second to be sure – which for the record it was just fine – but then I tossed it. That was a win.
  • I got diligent with my meal prep and planning and wasted (next to) NOTHING during these 21 days and only dined out 2x. Saving money – more time at home – THAT is a win for me.

But perhaps my greatest GAIN was the strength to STOP FINISHING the leftovers on the kids plates. I mean WHYYYYY does that lingering bite of mac & cheese feel the need to jump in my mouth?!?! You know what…IT DOESN’T! It doesn’t need to and if I can stop the impulse snacks for 21 days those actions clearly don’t need to be part of the norm.

And while the number “losses” weren’t HUGE I found success in my other Non Scale Victories (NSVs):

  • My wedding rings are more loose/comfortable – which I attribute to elimination of common inflammatory foods (i.e. that darn GLUTEN!)
  • Overall my CLOTHES fit better – not a drop in “size” but the muffin top and chubby pinchers that hung over my shorts and jeans is gone
  • I am more AWARE of the foods I choose to fuel my body and how different foods impact me differently
  • I pushed myself PHYSICALLY harder than any other program. Some of the workouts were LONG – LONGER than my typical 30 but I found a way to push past the mental block and continue beyond my normal to achieve my results.
  • Above all else I am simply MORE confident in my skin and you cannot put a number or a price on that!!!

My challengers would often praise my WILLpower I was demonstrating at the different events and travels we enjoyed these past three weeks but I realized it was the WHYpower that pulled me through.

Because nothing tastes as good – as being fit & healthy feels.

My little secret: YOU PLAN AHEAD!!!!

As my summer slimdown accountability group kicks off week 1 – I am getting similar inquiries – HOW TO STAY ON TRACK WHEN TRAVELING & AWAY FROM HOME

So I wanted to take a few minutes to share my top tips:

FOR YOUR WORKOUTS:

  1. Find a way to get your workout in!
    • Many of the Beachbody workout programs don’t even require any weights! If you’re doing something like PIYO or Insanity Max: 30 or T25 – you won’t even need to worry about packing anything special! You and a positive mindset and you’re GOLDEN!
    • No DVD player? No Internet? No problem!!!
      • Beachbody On Demand (BOD) allows you to stream all your purchased workout programs as well as hundreds of other workouts. While the Internet is required to stream straight from BOD using wifi – if you find yourself with no internet connection simply download the BOD app and then download the selected workouts for while you’re away! variety is the spice of life banner
  2. Invest in a resistance band (for all my Fixers!)
    • You can grab a resistance band from TeamBeachbody.com or at Wal-Mart or Dicks Sporting Goods for next to nothing, it travels well, packs lightly and will allow you to continue with your strength training workouts without the need for weights2015-03-04 07.05.37
  3. Use this time on “vacation” to give back to yourself!!! Sure you can allow yourself some extra rest but without the distractions of every day home life – carve out those 22-30 minutes, sweat it out, and reap the benefits all day long! This is a great time to set a new habit! Better yet – include your family or friends that are vacationing with you and make it a group effort! NUTRITION

  1. Whether you’re off to a graduation party, birthday party or neighborhood picnic – my biggest tip: DO NOT ARRIVE STARVING!2015-04-12 10.10.11
    • Yes you’ll eat while you’re there, but when there is food surrounding you, you tend to OVEREAT – and usually not on the healthy stuff. 9 times out of 10 – I drink my Shakeology ON THE WAY to any get together! This helps reduce the cravings, fills me up and allows me to make better food choices once I get there – and it avoids the HANGRY mess. We all need to avoid the HANGRY stage!
  2. If you’re attending a potluck – take something you know fits your goals. Maybe its a veggie tray or fruit salad, or my favorite: Southwest Quinoa salad – take something YOU know YOU will eat…but also tastes good too! Its not about eating rabbit food…its about eating food to fuel you – and yes – it can and does taste good too! southwestern quinoa.jpg
  3. In fact – its part of a healthy weightloss journey. Too much restriction isn’t good for you!!! If you know you’ll be at the family reunion and you can’t imagine passing up those homemade rolls then my goodness – eat and enjoy the rolls! Or cake or cookies or whatever it is that you LOVE. But enjoy one and move on!
  4. Follow the two-bite rule
    • When you’re staring at that decadent cake…and cannot stand it anymore. Take two bites. The first one will be amazing. The second one even better, but after that the satiation diminishes. So just stop there!
  5. Stay hydrated! Too often we are hot, outside and maybe even getting bored. Before we have a chance to realize it we’re stuck munching on who knows what…before you hit the pantry – drink a big glass of water. That hunger you thought you felt may really just be thirst calling! If you need a little thirst buster – try a sparkling water! The Dasani Pineapple is my FAVORITE! 2016-04-25 17.34.49
  6. Boost your Shakeology!!!
    • Beachbody has these amazing Shakeology boosts – Power Greens, Focused Energy & Digestive Health – that I use on a situational basis. When I am short on greens I toss in the POWER GREENS – when I need a day of extra energy I boost it up with FOCUSED ENERGY and when my digestion could use a little kickstart – I add in some DIGESTIVE HEALTH!2015-07-18 10.15.36.jpg
  7. Pack a cooler! 
    • Whether you’re heading out for a day of meetings, a day at the amusement park, a road trip down the coast or just a day at the pool…if you’re away from home for more than a few hours you’re going to need to eat.
    • Control the controllable, pack your veggies & fruits, clean/prep as much as possibl and include plenty of DRINKS!!! 2015-08-29 09.51.43
  8. Pick a “good bar” – there are a lot of “bars” on the market but trust me when I say they are not all created equal!!! Kind Bars, That’s It bars, and Quest Bars are a few of my go-tos – and more recently Lara Bars as they are Gluten Free, Vegan and NON-GMO!!!   9. If you’re at a house for a week long vacation – pick up your staples! When we vacation I always keep stock in peppers (great, easy snack!), apples, berries, yogurt, oatmeal, spinach, eggs, etc… so I can still continue to enjoy my favorites throughout the day. Then when it comes time for dinner I make the best CHOICES I can…afterall isn’t that all you can really do?!

Failing to plan planning to fail

At the end of the day – its about living and sustaining a healthy BALANCED lifestyle. There will never be a “good time” to start something new. So don’t wait any longer. When you’re ready – just go for it – do your best and never look back!!! Plan as much as possible and make HEALTHY choices at each opportunity!

If you’ve been following my Hammer & Chisel journey you may have noticed that week 3 kicked off with SEVERAL planned meals out – I mean its the holidays – tis the season right?!?!

Of course – but that doesn’t mean you can’t make some progress along the way too!!!

Hammer & Chisel week 4 the secret is getting started

We have had some holiday celebrations, my dad’s birthday dinner and just some time out with friends and family! But here’s the deal – I do believe you can have your cake and eat it too!

Each day I’ve been “picking my splurge” whether its the meal or dessert I pick one and do my best on the other options. I have found making that healthier choice doesn’t leave me feeling deprived but rather proud that I am doing something to better myself!

We even had a day date christmas shopping trip in the mix and at the suggestion of my hubs we packed all our meals – yup – snack 1, lunch and snack 2. Mancake bake, grilled asparagus and salmon burgers, some fruit, shakeo and plenty to drink! Hydration is key!!!

And in between running from place to place we would sneak in those meals, fuel up and get on our way! I tend to get HANGRY while shopping and often don’t want to take the time out to eat when I’m on a mission and this made it work out for everyone involved!!!

My sis came to visit which gave me that much more of a REASON – not an EXCUSE to stay on track – we simply made it something we would do TOGETHER! Family fitness is just one of the many things that fills my cup — I think she’s hooked for sure!

There is power in numbers – but you only have control of ONE.

Why you aren’t seeing results

Have you found yourself on a downward spiral ever since the warmer weather faded and the sweatshirts and comfy sweaters and jeans and boots came back into the rotation and oh, the holiday season kick off!!! Forget the pumpkin pie at Thanksgiving – I couldn’t stop with the darn cookies!!!

Anyway…if this sounds like you – let’s chat – because I was so riding that train and I am ready to say goodbye to those ways and help you do the same!

I was doing some research on the top reasons why people aren’t reaching their health and fitness goals and I wanted to share with you all what I came up with and some tips I am applying NOW to overcome them!

  1. Lack of preparation: I’m sure you heard the saying but failure to prepare is like planning to fail. I used the whole “I’m busy” excuse and started lacking on my food prep and as a result my choices suffered, my dinner prep each night became more lengthy and it was added stress. Welcome back meal prep MONDAY!

TIP: MAKE A PLAN! Even if its just for your dinners or just for breakfasts or lunches – MAKE A PLAN and then a grocery list, go shopping, prep things out and take action! We all start somewhere!insanity max 30 week 6 - meal prep monday peppers

2. Not drinking enough water: You should aim to drink AT LEAST 1/2 of your body weight in water. For example if you weigh 150 pounds you should drink at least 75 ounces.

3. Not eating enough protein: The key is balance – you need balance in your nutrition and you need lean proteins! Here are some examples of things you may not initially think of when you think of traditional protein foods like chicken and fish but they’re great sources and help rebuild your muscles!

Tip: Try to have  source of protein with at least 4 of your meals in a day. Including this will help keep your metabolism going AND keep you fuller – longer!

4. Consuming too many liquid calories – Ok – this is pretty much self explanatory but the only “liquid” calories I will consume are within my superfood meal replacement Shakeology! And to be honest – I typically blend it like ice cream and eat it with a spoon so I don’t exactly consider that dense nutrition as “liquid calories” but nonetheless this is a place where you can really rack up the calories!

TIP: Try something all natural like La Croix flavored sparkling water if you like the FIZZ without all the chemicals! I can find it at my local grocery store, occasionally at Aldi and always at Target!

5. Not enough sleep – Now I know all you mamas out there know this all too well but sometimes it takes a little reiteration for it all to come to surface!

When we sleep – our bodies recover, we grow, we get ready for the day ahead. Not enough sleep will leave your metabolism slower, your mood dampened and your results….stagnant! While we all vary on the amount “needed” you should aim to get between 6.5 and 8 hours/night. My hubs has been my biggest fan here and practically pulls me into bed by 11:00 each night. It can be hard to shut it down but let’s be real – more sleep always equates to more energy – its the easiest equation to master.

TIP: DON’T SNOOZE! Set your alarm for the true time you need to be up and get solid, meaningful sleep!!! And yes, I need to take my own advice!!!

6. Shopping the center aisles – How do you pick the right food and healthy food?!?

2014-08-24 07.42.58First and foremost, by making a grocery list prior to going is going to not only make it easier on you, but save you money!!  Next, look at you different food groups and pick out healthy foods/snacks that you have on your meal plan that you wrote out while in that planning stage mentioned above. I make my list by food groups (its easier in the store also when you’re searching). So veggies/fruits- they are all together, so pick your fresh and frozen, of course, skip through canned (full of sodium and chemicals), then add in your LEAN proteins, dairy and before you know it you just walked the perimteter of the store! You will likely head to the center to grab some carbs – just make sure you are reading the labels and picking 100% whole grains – NON-GMO!! Whether it is bread, wraps, crackers, flour.  You want the complex, unrefined carbs where they have not been altered!!   Brown rice and oatmeal are other goodies that will help you along the way!!

Tip- Do most of your shopping on the outside of the store! That is where you will find your most natural and healthy food!

7. Skipping Breakfast – Think of your metabolism like starting your internal fire…the food you fuel your body with is going to get it all started  and its going to start with BREAKFAST but you have to continue all day long.

Tip – Prepare your breakfasts foods in advance. I do a quadruple recipe of my MANCAKES twice a week so they’re always ready to grab and go. EGG CUPS are a weekly staple and OVERNIGHT OATS are perfect for something filling, balanced, and ready to eat on the go! Of course there’s always shakeology – which is my no fail – never miss – breakfast necessity!

8. Not tracking your food – It may seem like a daunting task but tracking your food can tell you so much about what you’re really eating. MyFitnessPal is one of the best apps on your phone to help you keep track of everything!! Its easy to use, convenient, an ALWAYS with you!!! Sometimes we snack and snack until we do not realize the extra calories we are adding that we do not need!! This will really help you target where you should be calorie wise with daily intake!!

If you have not used it, I recommend at least trying it for a week and see if it helps!!!

9. Lack of Variety in your workouts – Sticking to the same routine can be very convenient, but at some point, this routine may not give you any results, so you need to shake things up. Changing the workout routine can be a motivator and may make things more interesting for you. I love how the 21-day fix gives you 7 different workouts for each day of the week and a few alternatives to add to the mix but even after a few rounds of that I need to switch things up! The reason for this is simple…with the repetition of the same type of workout, your body will get used to the exercise routine and will consume less energy. If you change up the exercise routine, your body will be continually challenged and it will burn more calories, resulting in a more successful weight loss. 10. Giving up too soon – Ever reach a goal and think “Man, I was just about to give up then…” – here’s the thing. Success really is like an iceberg. There is a LOT of “stuff” that goes on behind the scenes or under the surface that you can’t see. But if you can be persistent – realize YES you will fail – make a few sacrifices and make that dedication to your goals – you will get there…but you cannot give up!

I can’t believe its been TWO weeks already!!! I’ve started and stopped this blog post several times now with the crazy whirlwind of my life but I am finally sitting down to digest exactly what all happened that week…a week that had such a profound impact on my life – on my coaching business – and on my team.

Its pretty cool what can happen when you surround yourself with 25,000 other positive people who simply lift you HIGHER!

Beachbody’s Coach Summit is an annual event where coaches get together to learn and inspire one another, to build on team relationships, workout and meet the celebrity trainers, to celebrate the prior years accomplishments and recognize those who have had their lives so greatly impacted by Team Beachbody!

Just being around some of the best people in this company pushes me and fuels that fire and desire to be at that Elite party again next year!!! Needless to say it was a fun night!!!
But its not all about the fun – there’s some learning in there too!!!
Our Thursday started with a large Dream Team training.
My team is part of the #1 team in all of Beachbody, the Dream Team, and we hosted a Recipe for Success training program on Thursday morning. Talk about a power packed schedule. Two top 10 Elite Coaches and 6 additional Elite coaches sharing THEIR stories, THEIR tips for success and their struggles to help and inspire more to do more!!! I don’t think anyone left that training without a burning desire to Go. Do. MORE!

2015-07-17 08.25.19That evening was also the opening ceremonies which included recognition of a few levels including new 4-star Diamond coaches…ME! Walking across that stage seeing my name on the board – hearing my team mates cheering for me along wit 25,00o other coaches was so surreal.
It is also an opportunity to share and launch new products, programs and technology advances and let’s just say this year was jam packed!

Ok ok – perhaps its information overload – but let’s just say there’s lots to look forward to!!!
Friday kicked off the training sessions and a very special moment – the Celebrity photo Ops.
I earned this photo session based on the number of people I was able to help towards their health & fitness goals in the month of May and I was beyond excited to to snag a hot spot next to Chalene Johnson, Sagi Kalev and the man behind the hottest new program CIZE – Shaun T!

Trainings filled the day on both Friday and Saturday led by Inspirational speakers, top coaches, and Corporate leaders and celebratory parties filled the nights.

The streets of Nashville were shut down and about 20K coaches gathered on Broadway to SWEAT – sweat for something bigger – those who couldn’t and for one another!!!
And as I take a step back and look I realize that making this short and sweet totally didn’t happen!!! Oops! 🙂

All in all, this trip was absolutely INCREDIBLE – LIFE-CHANGING!
Sometimes I still have to stop and just thank God for this opportunity!
I had dreams of being a big successful executive in a big tall office building in a big city making big bucks.
Then…
I became a mom.
And all I wanted was to be at home with THEM.
But my desire to contribute to my family never left.
This opportunity has given me what I believe is the best of both worlds and I cannot imagine how different my life would be today if I hadn’t taken the leap to become a coach myself!

Let’s rewind…

I joined my first challenge group a year into my Stay at Home Mom (SAHM) life. It was February and I had left my career in public accounting the April prior. It was hard enough for me to “splurge” on the challenge pack but I really wanted a change so I went with it. I ordered and immediately cancelled the auto shipments. Again, there was NO WAY I could afford this monthly. But I also committed to myself. I had made the investment in the challenge pack and I was investing in ME. I purchased the 21-day fix and told myself I would drink these little shakes for 21 days, I would follow the plan and I would workout.

My 21-day fix results – Round 1 – never missed a shakeo!!

Guess what???? I GOT RESULTS – In just 3 short weeks….It actually worked!

Now the hard part came…I wanted another bag of the Shakeology but how????

Here’s what I did:

1) First, I signed up as a coach. Well – a discount coach – but it was the same process – I mean – who doesn’t want to save $$$. This had a big appeal and since I had already purchased a challenge pack there was no sign up fee and if I did nothing else, I would at least be saving $15/month. SWEET!

2) I stopped my prescription prenatal vitamin that was costing me $30/month.

I was nursing my 9 month old at the time and after talking to my doctor the vitamins and minerals found in my prenatal were also in Shakeology! The only thing I had to add was a separate DHA supplement!!! WINNING!!!! As always – if you’re pregnant or nursing you should talk to your doctor first. But then again you should actually consider EVERYTHING you put into your body – Shakeology included – but also that cookie, the pizza, the coffee mocha frap, the fast food – etc.. You should think about EVERYTHING you’re eating. I know when I did I quickly realized you can’t get the all natural, non-GMO nutrition found in Shakeology in other foods and personally I couldn’t think of a better food to fuel my body with and my family!!!

I was actually giving my little one MORE nutrition that before! I wonder if I could quantify the amount of money saved from not having to go to the doctor – from establishing healthy nutrition habits in my young one?!?! Ok – tangent over – back to it…

3) I was able to completely STOP by Chron’s Disease medicine – savings – $60/month. After taking medicine for nearly 7 years I started noticing very positive changes to my digestive system. I reduced my dosage on my own and after 4 months of my daily dense superfood Shakeology, regular exercise, and making that transition to clean eating…I was confident I didn’t need it anymore! I made an appointment with my GI specialist and in August got the official words to stop all medication! If nothing else – that aspect alone is enough for me to ensure this lifestyle is simply that MY LIFE!

4) We stopped eating out!!!

For almost the first 6 months – we truly just didn’t eat out! Once we made the investment in the Shakeology and investment in our own health we realized we could cook the foods we liked in the portions our bodies needed for a fraction of the cost. We ditched the pizza and wings Friday night ritual and the 1x/week dinner out. I’ll estimate that by cooking dinner in vs. ordering out 1x a week and eating dinner out 1x a week our family of four saved at least $40/week, of that my portion was at least $15…and I actually think this is a super low ball park number!!! We never messed around when we would go out – there was always an app and always a dessert so this became a huge saver for us! We also found that shakeology shaken up on the road makes for the healthiest and most convenient fast food EVER!!!

Rough guess – $60/month for myself – $120/month for my family 

So as you can see – from the compound effect of the changes we made – while we were spending an additional $115 on one bag of Shakeology – I was saving $165!!! And we didn’t even address that this replaced my prior unhealthy not all natural oatmeal packet breakfast I used to eat or the ice cream we would frequently grab from Dairy Queen 🙂

And all the while this is saving me money, helping me feel better and allowing me to be the BEST mom/wife possible…I started to inspire others along the way. Those closest to me – aka – my ENTIRE FAMILY!

Sitting here mid-March about to get breakfast ready for my family and thinking about how different today’s March morning is compared to years past…

For 6 years, my winter months were spent working…literally, all day, 7 days a week – weekdays – weekends! By the time March came I was so mentally exhausted, miserable from the way I had spent the several months prior and ready for a change, but I didn’t think I could make one! That was simply the way it was!
I remember when M-TH, 5:00 used to mean it was time to place the dinner order to prep for AT LEAST another 5 hours of work!

Auditing wasn’t exactly a glorious job but it was a good job. A great job in fact that allowed me to provide for my family. But…with the arrival of baby #2 I knew I couldn’t do it any longer.
2 years ago I endured my LAST “busy season”. I longed to be home with my family but at the same time we had established a lifestyle we were comfortable with. Leaving my career in auditing meant I would be living a DREAM come true as a Stay at Home Mom…where I was meant to be…with my babies…but it also meant financially, we were going to have to make some changes…changes we were all willing to make…but changes nonetheless!

Last February we had a medical scare with Colt that landed us two nights in Children’s hospital. Thankfully nothing serious came as a result but we did receive a hefty bill. I still remember my stomach turning as I was writing that check to cover what insurance didn’t. Beyond blessed to have our little boy back to health but after 10 months of no longer working we didn’t exactly have “extra money” laying around. The best thing that came of that scare…as I sat watching my sick little boy sleep I was scrolling Facebook and saw a post about the 21-day fix…I was intrigued, asked questions, and went for it….and well, the rest is history!

Within a few short weeks I was feeling amazing, my family was eating better, I had more energy than my crazy toddler and Kyle and I made a decision that I would sign up as a Beachboy Coach.
