This group is designed to help you with those weekly meal plan ideas, provide some fresh, clean, crockpot meals that will not break the bank but will keep you and the family happy and full!
We’ll also share some basic healthy living tips, balance in and out of the kitchen and some ways to make the best of your leftovers!!!

I am excited to share that I have completed all 30 days of Country Heat, I have LOVED every second, enjoyed the change up in activity and was more than happy to say goodbye to those 4 pounds, which are not welcome back – EVER!
It’s never easy sharing the “before” pictures but I have learned to focus on the fact that there is most likely at least one person who can relate and my hope is that in turn they are inspired to make a change.

We had just returned home from Nashville and while I was bursting at the seams in the excitement and pride from all our Coach Summit celebrations I found myself uncomfortable in my clothes for the first time since I had become a coach…nearly 2.5 years ago.
The scale was kind enough to let me know that my weight was at an all time high.
131 pounds.
Now I’m sure there are some of you thinking “Gosh I’d kill to be that weight”
But that’s not the point…
This is what I had weighed at 24 weeks PREGNANT with my son.
At 5’1″ a few pounds can really make a difference and while I try my hardest to ignore the number…that number was supported by the way I felt when my shorts didn’t button.
I knew I needed to embrace the change and change I did!
I swapped out my weights for dancing shoes and enjoyed 30 days of Country Heat-despite the fact that I looked like a goof 😜
I was inspired by the individuals who had shared their journeys with this program and I knew I could get there.
Was I perfect?!
Hell-to-the-no!
But I did enjoy my splurges in moderation and with the support of my team, challengers and amazing family I feel a bit like me again!!!
My goals are set and they’re pretty simple:
It feels good to be back and I am excited to start the next phase with a new group of challengers in our health bet next week!

This was a simple meal that can really be tweaked and served different ways to meet your and your family’s likes and dislikes!
WHAT YOU NEED:
2 pounds boneless, skinless chicken breasts about 4 large breasts
1 large onion, diced
1 red pepper, diced
4 gloves of garlic, minced
1.5 TBS fajita seasoning
Sea salt and ground pepper to taste
4 cups of low-sodium chicken broth
1 28 oz can of diced tomatoes
1 can of black beans, drained and rinsed
2 cups of whole grain brown rice
Optional:
Shredded colby jack cheese (optional)
Greek Yogurt (for sour cream substitute)
Tortilla chips for a crunch!
Crockpot liner for easy clean up (highly recommended)
Avocados/Guacamole
Fresh Spinach (serve as a salad)
WHAT YOU NEED TO DO:
Line crockpot with liner
Place chicken breasts in crockpot and cover with chicken broth, canned tomatoes, diced onions and peppers, minced garlic,fajita seasoning sea salt and pepper.
Cook on low for about 6 hours.
Remove and shred chicken breasts from crockpot.
Turn slow cooker to high and stir in rice and black beans.
Let cook approximately one hour on high, or until rice is tender.
Add chicken back in, cook for 20 minutes on high, or until chicken is warm.
Serve with toppings of your choice
ENJOY!

You see this last weekend I did something I envisioned a year ago but wasn’t certain it would become a reality…at least not so soon!
Now I have to share that this would not have been possible without the incredible support of my husband
He was a key player as I hosted my first ever DIAMOND Retreat in Deep Creek MD with one of my closest friends and what I like to think of as my Business Partner in crime!
You see…Sarah and I attended a leadership retreat last year hosted by our upline sponsor coach and we decided that this year we would do the same…with OUR leaders WE would help shape as we built our teams, our legacy, our TRIBEs throughout the last year.
Sarah and I are Success Partners.
We are each other’s biggest fans, shoulder to lean on, supporter and FRIEND. We get each other, build on one another’s strength’s and compliment each other’s weaknesses in a way that allows us to become better Coaches and better LEADERS.
Being able to work together to host this weekend and to get these girls together was literally a DREAM COME TRUE!
The only thing that would have made it better was if all our Diamond Coaches could attend!
Our Friday morning kicked off with a car loaded with gifts, food, craft supplies and perhaps some beverages!
We planned this weekend to not only recognize our leaders but help them grow, answer their questions, give them advice, help them with their vision and have some fun and celebrate all our team accomplishments!!!
The girls all walked in to a table covered with personalized posters and a few gifts of course!!! Gift giving has become my love language in this business. These ladies work H-A-R-D and being able to shower them with meaningful, purposeful gifts fills my heart, or my cup shall I say!
Friday night included a training while we piled high on the couches, ears wide open ready to absorb, take notes, and apply these things to our business.
We had fun asking questions, allowing the girls to all get to know each other and all sharing a bit more about ourselves and WHY we all not just took this LEAP into coaching but continue to work hard each and every day to grow our businesses and serve others!
There were happy tears, some sad tears and a heck of a lot of bonding!
Our Saturday was JAM PACKED…starting with few minutes for ME!
I know it may sound crazy but I need these 10-15 minutes of positivity in the mornings to get into that mindset.
We enjoyed a COUNTRY HEAT LIVE workout led by one of our coaches…
From the girl who never wears make up and didn’t even OWN a curling iron to last year I will admit…getting all done up and feeling like a princess is one heck of a confidence boost!
When the glam was over we switched gears and headed off to the Lake to RELAX. I honestly feel that the best aspect was NO WIFI!!
Unplugged, laughing, chatting, being adventurous and simply being together was so rejuvenating!
We enjoyed all our meals at the house, prepared with good company, keeping it clean where we could
and splurging where anyone would…ICE CREAM BAR!
The last “activity” included crafting up vision boards together.
Each girl brought their own board, ideas and together we talked about what we wanted, what we needed, what our path looked like and how big our dreams could be dreamt!
Did you know when you write out your goals it will force you to clarify what you want because it will motivate you to take action?
It will provide a filter for other opportunities and it will help you overcome resistance because it will enable you to see—and celebrate—your progress.
If I can give you one bit of advice: its don’t just sit with your goals in your head.
Write them down.
Share them with others.
And celebrate every step along the way!
Our night ended, we woke up Sunday morning, said our goodbye’s and all headed home.

BLESSED to have this weekend.
I often share that this life I now have is nothing that I ever imagined my life would look like.
I thought I was going to be this successful business woman working in a tall city sky scraper in NYC making the big bucks
But now that I look back, I realize that I still have that career I envisioned…I just work from a home office in the Pittsburgh suburbs…

Well really I should say weeks 2 and 3 because life got away from me a wee bit last week and I never got around to sharing last week’s so we’re summing up 2 and 3 today!
We’ve enjoyed some travels, some “not so Country Heat” approved meals and a heck of a lot of dancing!
A girls trip followed by a Leadership Retreat to Deep Creek MD meant a bit of improvising, planning, sacrificing, staying strong through the temptations and allowing myself to indulge along the way.
I can’t say I’ve been perfect but I will say I have made progress.
The workouts have been the “easy” part for me with no equipment needed I have been able to squeeze them in at hotels, on my patio iwth my kiddos, and everywhere in between!
The nutrition hasn’t been ON POINT but I know what I need to do to finish out my 30 days STRONG and the meal plan is where it all starts.
With my daughter’s first day of Kindergarten coming up (enter a few trickling tears) I’m planning two crockpot meals and a lot of repeats this week! Veggie Egg cups are one of my favorite “prep in advance” meals which can be a snack, breakfast or even lunch!
They’re great hot or cold and on-the-go or even prepped in a 9×13 baking pan for easy clean up!!!
I’m trying a new crockpot burrito bowl recipe (thanks Pinterest!) and focusing on my portions, planning and prep to get me through this final stretch!
I know how important nutrition is and I feel the push to regain my focus and prove to myself that I can be disciplined enough to FOLLOW my plan and finish strong!
Excited to see what the next phase brings!

I get the question almost DAILY about my shakeology – why its so thick – how I mix it – how its blended and why it always looks so darn GOOD…here’s the details:
1 tsp Fat Free Sugar Free Cheesecake Pudding mix (I know its not clean!!! But that small teaspoon goes a long way. Just trust me on this one)
I combine everything in my blender with about 10-12 ice cubes. Basically JUST ENOUGH that allows my blender to blend it without getting stuck.
I switch the dial to “frozen desserts” – turn it on and let it do its magic!!!
(My old blender didn’t have this feature so I just did the “crush ice” feature for about 10 seconds then I would blend on high until it sounded like all the ice was gone).
Sometimes I have to take it and shake it a bit but that’s how I get the ice cream consistency!
