Ok – so I often I talk about my challenge groups and how they’re such a great resource for support and motivation especially as someone begins their fitness journey and also as they continue! But they are also a great place for recipes….not only from me, as a coach, but everyone in the group! I have to thank Anna for sharing this sweet treat with us all!!!

This recipe is found in the 21-Day Fix and 21-Day Fix extreme nutrition guides but honestly I would have never made it on my own. I always made a different version of Chocolate Shakeology Pudding and saw no reason to try a new one. Well…let me just say, this is so smooth and tastes like a homemade chocolate mousse.

WHAT YOU NEED:

(makes 4 servings)

  • 1 1/2 scoops Chocolate Shakeology
  • 1 ripe medium avocado
  • 1 medium banana, cut into chunks
  • 1 cup unsweetened almond milk

WHAT YOU NEED TO DO:

1. Place all items into a blender, cover, blend until smooth (If too thick you can use additional almond milk)

2. Pour into 4 dessert cups; refrigerate for at least 1 hour, or until set (I missed this step the first time I made it, so I just used frozen banana and tossed it in the freezer for about 10 minutes…either way works!)

21-DAY FIXERS: 1/2 RED 1/2 YELLOW 1/2 BLUE

Doesn’t that bright green color just seem so appealing???

In all seriousness I was bound and determined to find a way to “like” Brussel Sprouts. Its no secret that these little veggies are one of the most highly beneficial greens you can eat but the name alone made me cringe. I had never even tried them but the reputation made me steer clear.

Time for my big girl pants!!! I took the easy way out and picked up one of the pre-washed and trimmed bags and it sat. And sat. And sat in my fridge right up to the expiration point at which point I decided wasting money was far worse than failing at cooking these little things so I went for it.

My first attempt was a turkey bacon Brussel Sprouts. In my mind, everything is better with bacon so why not the case with Brussel Sprouts?!

WHAT YOU NEED:

1 pound of brussel sprouts

3-4 slices turkey bacon, chopped

2 teaspoons olive oil

4 gloves garlic

sea salt to taste

WHAT YOU NEED TO DO:

Preheat oven to 425. Line cookie sheet with parchment paper. Cut Brussel Sprouts in half and put into bowl. Add olive oil, garlic, salt and bacon and mix thoroughly. Spread out onto pan and roast for 25 minutes or until starting to brown, stirring halfway through.

So what did my family think? Well Colt, my one year old who eats everything, spit them out, Aub, my picky 3 year old, wouldn’t even consider trying them, my husband said “better than I expected” and I thought they were pretty good…although I think the bacon helped…a lot!  I only did half the bag-so a few days later I decided to take the advice of my cousin and try a brown sugar recipe!!!

WHAT YOU NEED:

1 pound of brussel sprouts

2-3 TBS of brown sugar

2 teaspoons olive oil

WHAT YOU NEED TO DO:

Preheat oven to 425. Line cookie sheet with parchment paper. Cut Brussel Sprouts in half and put into pot of boiling water. Boil for about 5 minutes then add to a mixing bowl. Add olive oil and brown sugar and mix thoroughly. Spread out onto pan and roast for 10-12 minutes or until starting to brown, stirring halfway through.

The verdict? The sweet ones were much preferred by both me and my hubs!!! I am not a huge fan of adding sugar, especially to vegetables, but these were a nice change. I even enjoyed the leftovers as a snack the next day!!! If you give them a try let me know what you think – sweet or salty???

New month – New week!!!

Anyone stuck in a food coma after the long holiday weekend? I’ll be honest….getting my workouts in was no problem-I even doubled up a few days but oh the struggle for me has been in the kitchen! I love sweets and have such a hard time just saying “no”- my 80/20 rule has been drifting more towards a 60/40 and I can feel it and see it! Its those darn COOKIES and I know that struggle will continue to tempt me all month long as December is here and the jingle bells start ringing and the Christmas cookies are baking! For me – its time to FOCUS!!!! We have just over 3 weeks before Christmas and Insanity Max 30 is being released TODAY!!! It’s time to focus on my nutrition-who’s with me???

I absolutely love finding ways to take old favorites and spin them into healthy, delicious meals! After failing a few times, I finally had success with my Vegetti gadget from Amazon and let me tell you – zucchini pasta is delicious!!!

This meal took all of 5 minutes start to finish and I topped it with some ground turkey mixed with all natural crushed tomatoes – and got myself a very healthy, fast, filling lunch!!! 
 
WHAT YOU NEED:
(per person/per serving)
  • 1 zucchini
  • 1/4 pound cooked pound of ground turkey
  • 1/2 cup crushed tomatoes
  • 1 tsp olive oil
  • sea salt and pepper
 
WHAT YOU NEED TO DO:
  1. Heat oil in pan over medium heat
  2. Spiral the zucchini and sauté for 3-4 minutes with desired sea salt and pepper
  3. Top with meat sauce
  4. ENJOY!
*For all my 21-day fixers – this meal would be 1-2 green containers (zucchini and tomatoes…assuming you use the tomatoes that have no added salt or sugar!!!) and 1 red and 1 teaspoon!

Ok – HOLD THE PHONE!

Yes, I LOVE SHAKEOLOGY – that’s no secret! I am still amazed that someone found a way to pack the nutritional value of 6 salads into a glass. To include digestive enzymes, probiotics, protein, antioxidants and nearly every vitamin and mineral your body needs in a convenient meal replacement shake that – GET THIS – tastes AhMAZING! It’s like magic!

But this stuff isn’t just limited to a meal replacement shake – it makes some incredible desserts!!!! And one of my all time favorites is Shakeology Pudding:

WHAT YOU NEED:

  • ¾ cups plain Green Yogurt
  • ¼ – ½ scoop Chocolate (Vegan or Regular) Shakeology
  • 1-2 TBS PB2 or All natural Peanut Butter

WHAT YOU NEED TO DO:

Combine the 3 ingredients into a bowl and stir until blended. If you want to get real crazy you can even toss in a few chocolate chips – but I think its good just the way it is!

This is a sure fire way to satisfy any sweet tooth craving!!! I usually opt for the lower calorie option and do 1 TBS of PB2 whereas my hubby opts for the 2 TBS of all natural PB – but it’s totally up to you! Either way it’s a delicious, high protein, 21-day fix approved (1 ¼ – 1 ½ reds plus a few of your tsps depending on how much PB or PB2 you use!!!)

I was making good use of naptime on Sunday and while the gluten free brownies were baking I started prepping for my first ever attempt on Butternut Squash Soup! I think its the idea of knowing how darn hard those things are to cut up but I bought the squash a week ago and had yet to cut them open. And this isn’t the first time I ran into “needing” to use them up! I got a recipe for some delicious soup from my brother in law and made a few tweaks to create a delicious, healthy, butternut squash soup!

WHAT YOU NEED:

  • 1 medium onion, chopped
  • 3 carrots, peeled and chopped
  • 4 gloves of garlic
  • 1 butternut squash, cleaned, skinned, and sliced
  • 1/2 Granny Smith Apple, skin removed, chopped
  • 25-30 oz low sodium chicken or vegetable stock
  • 1 tsp olive oil
  • Pumpkin or sunflower seeds (optional) 

WHAT YOU NEED TO DO:

  1. Sautee onion, carrots and garlic in olive oil, until soft.
  2. Add butternut squash and apples
  3. Add chicken/vegetable stock until just covered and bring to a boil. Then simmer until soft.
  4. Put all ingredients into a food processor or blender and blend until smooth. You may have to do this in two batches.
  5. Pour back into pan and season as desired***
  6. Serve topped with pumpkin or sunflower seeds for a little added crunch!

***I’ll be honest – I didn’t add anything else!!! Some things to consider would be salt, pepper and ground nutmeg! You could also add heavy cream depending on the consistency you like – but I was trying to keep it low cal! Plus it was DELICIOUS just the way I made it so I saw no need in adding anything else! 

This batch made about 10 cups – enough for two dinners and a few lunches!!! You could also freeze some into individual containers for a quick easy weeknight meal! I think its safe to say it was also toddler approved!!!

Day 4 and we finally finished it all up! I’ll be making this one again soon for sure – likely Thanksgiving Day!

I usually spend my Sundays with my family using nap time to meal plan and grocery shop for the upcoming week however I found myself with a quite a bit of produce leftover from the week on the verge of going bad. I don’t use the word “hate” very often but I really truly HATE wasting food!!!

Top of my must use list: 2 baked sweet potatoes and quinoa!

Using the two sweet potatoes was a pretty easy decision! I had remembered seeing a brownie recipe a while back and this seemed like the perfect opportunity to give it a try!!! My hubs has recently gone gluten free so I wanted to make sure it was something the entire family could enjoy!

Sweet Potato Brownies (Gluten Free)

WHAT YOU NEED:

  • Maegan Blinka, Meal prep Sunday, gluten free brownies, dairy free brownies, sweet potato brownies, healthy treat, healthy dessert, quinoa brownies, 1 Large or 2 small sweet potatoes
  • 3 eggs, whisked
  • 1/4 cup unrefined coconut oil, melted
  • 1/3 cup honey
  • 1/2 tsp vanilla extract
  • 3 TBSP Cooked Quinoa*
  • 3 TBSP Unsweetened Cocoa Powder
  • 1/2 tsp cinnamon
  • 1/4 tsp baking powder
  • dash of salt
  • 3/4 cup chocolate chips

*I had leftover quinoa in my fridge. You could also use quinoa flour or coconut flour as a substitute

WHAT YOU NEED TO DO:

  1. Bake your sweet potatoes (or if you’re like me use leftover ones!), peel skin and let cool
  2. Heat oven to 350 degrees
  3. Mash sweet potatoes and add: eggs, coconut oil, honey, vanilla
  4. Add dry ingredients: quinoa, cocoa powder, cinnamon, baking powder, salt and mix well
  5. Stir in chocolate chips
  6. Pour into 8×8 glass baking dish and bake for 30 minutes.

If you have a little helper like me that’s an extra bonus!

My only advice – Try not to eat the entire pan! I had 1/4 of the pan gone within minutes and had to hide it from myself in the microwave!

Ok, ok, want to know my secret to the fastest weeknight dinner – USE A ROTISSERIE CHICKEN!!!! In an ideal world, I would grill my chicken every week…but with the colder weather approaching, heating up the grill seems to take FOREVER and some nights…that little rotisserie chicken is simply perfect!!!

I started buying them when my little guy started on “real foods”. A friend of mine suggested it because the meat is so soft and easy to chew, especially when the teeth are limited! And although my little guy can pound the chicken, he couldn’t always finish it before it would go bad – so I started coming up with other uses.

No joke – this dinner went from the fridge to the table in about 5 minutes! But this was all in the advanced prep!

WHAT YOU NEED:

(makes 2 servings)

  • 2 cups broccoli
  • 1 cup cooked brown rice or quinoa
  • 1.5 cups shredded chicken*
  • 2-3 TBS of Hot Sauce (I prefer red hot)

*If you don’t have a rotisserie chicken you can make your own shredded chicken! I like to make big batches periodically by simply cooking several chicken breasts in the crockpot with about a cup of water or chicken broth and some garlic and fresh lemon slices. Once its cooked, shred it, let it cool and then freeze into smaller batches to add into meals like this or soups, salads, sandwiches, etc…! If its only lightly seasoned the possibilities are endless!!!

 

WHAT YOU NEED TO DO:

Mix all ingredients in a pan until thoroughly heated – and voila! Dinner is ready!!!

Since the chicken is already flavored and there is some salt in the red hot I don’t add anything additional seasonings. This makes for great, fast dinner and you can easily double for a quick lunch later in the week!

BONUS –> You can also make this fit your 21-day fix meal plan! Each serving would equate to one green (broccoli) 1 yellow (rice/quinoa) and 1 red (chicken). The hot sauce adds some additional salt but otherwise would be a “free food” so I usually count this as 1 teaspoon and my orange. You could also top with some avocados (1 blue).

Kit Kat Shakeology

Ok, ok, so we are dealing with something in my house that few women experience – my hubby cannot gain weight!? Only problems a man can have, right?! He actually recently started the Body Beast program after 2 rounds of P90 X and the additional workouts are really increasing his metabolism – he’s literally hungry ALL the time!

So while he’s trying to gain weight (healthily) and I’m trying to maintain we’ve been searching for ways to enjoy similar foods but while adding a bit more into his plate!

This Kit Kat Shakeology has been a daily occurrence for about 5 days running now but I make it two totally different ways. His is with almond milk—>mine is with water. He uses 2 TBS of all natural PB—-> I use 1 TBS of PB2. He uses 1/2 a banana —> I occassionally add in 1/4 of a banana- and with these little changes his comes in around 650 calories and mine is under 300 calories. We get the both of best worlds! One amazing shake that can be both a high calorie meal replacement shake, a low calorie meal replacement shake or something in between!

  • 10 oz of liquid – almond milk and/or combination water (milk will make it more creamy)
  • 2 tsp of unsweetened cocoa powder
  • 1 rice cake
  • 1/2 banana
  • 1 cup ice

WHAT YOU NEED TO DO:

Add all ingredients to the blender. Crush ice for about 10 seconds and blend until smooth consistency.

One of my favorite things of fall is all the winter squash! Squash is easily one of my favorite veggies. But…confession time – I usually cheat and buy the cubed butternut squash from the grocery store!!! Its just so dang hard to cut those things in half! But, I had been staring at this little guy on my counter for over a week so I figured it was time to brave it! I solicited some ideas from my facebook friends on some yummy recipes and although there were quite a few impressive sounding ideas…I couldn’t pass up the grilled option given we were sitting on a very unseasonably warm late October day!

WHAT YOU NEED:

  • Butternut Squash
  • 1/4 – 1/3 cup Balsamic Vinegar
  • 2-3 TBS Honey

WHAT YOU NEED TO DO:

Grilled squash, grilled butternut squash, Maegan Blinka, honey glazed butternut squash, healthy dinner side, clean eating,

Steps for making grilled butternut squash

  1. Wash the butternut squash thoroughly
  2. Add the balsamic vinegar to a medium saucepan and bring to a boil. Cook for about 5 minutes and add honey
  3. Slice the squash in half so you have two even bottoms to work with and peel off the outside
  4. Preheat the grill to medium-high heat
  5. Cut each half into slices and then steam in a microwave safe bowl with about 1-2″ of water for 4 minutes
  6. Grill approximately 5-6 minutes each side, depending on the thickness of your slices, brushing with honey & balsamic glaze
  7. Enjoy!

 

I also think this would be good with some brown sugar or cinnamon and a little olive oil! Get creative – try something new!

Tonight I served it with grilled chicken and steamed broccoli! YUM!!!!

Sounds promising right?!?! I don’t know about you – but in my world, all dinners would be prepared in under 30 minutes. Once I start heading towards the kitchen my kids start that “need for a snack” request train and the last thing I want to do is give in to snacks to keep them happy while I’m cooking! I use my crockpot A LOT especially in the colder months, but you can only have so many crockpot meals! So in turn, I also use my freezer A LOT!!!! And I do A LOT of prep work early in the week so I can quickly make a delicious dinner later on!

 I started doing Wildtree freezer parties with my friends and I LOVE them! Sure any type of “Moms Night Out” is fun but with these parties not only do you get a night out you come home with a stockpile of fresh and healthy meals for your family all ready to be frozen and pulled out for a quick convenient meal during the week!!! One thing I’ve learned is although these parties come with a pre-made menu and suggested sides – I make them my own so they fit my lifestyle! I’ve found greek yogurt is a great substitute for any sort of cream cheese, sour cream or cream of whatever soup you traditionally would use!!! The seasonings are all organic and non GMO which makes for a healthy mama!!! On to tonight’s 30 minute dinner…

Rosemary Chicken and Colorful Quinoa

A few weeks ago I had prepared two freezer bags – you could do this the night before and put in the fridge or weeks before to freeze and use when ready. By all means you could even do this the day of…but personally I rarely have that much time all in one day! Like I said…this is a  30 minute meal!

 

WHAT YOU NEED:

 

  • Chicken and Veggie Prepared Freezer Bags* – see below for instructions

  • 2 Cups Cooked Quinoa

  • 2 cups Fresh Spinach

  • Avocado (optional)

  • Crumbled Feta (optional)

WHAT YOU NEED TO DO:

 

1. The night before: prep chicken and veggies or pull freezer bags out of freezer and allow to thaw in the fridge for approximately 24 hours. This is why meal planning is SOOO important…this was already done, no need to try to “quickly” thaw.

2. Heat a nonstick skillet over medium heat, add 1 tsp garlic grapeseed oil or olive oil.

3. Remove chicken from marinade, cook through in pan, turning once.

4. There are two options with the quinoa. 1) While chicken is cooking, prepare quinoa** according to package instructions – OR – 2) Take pre-cooked quinoa out of the fridge. I like to cook a big batch of quinoa at the start of the week and then use for multiple recipes later in the week. It makes for a great carb to include with lunch, a topping on a salad or even in a wrap!

5. When chicken has cooked through, remove from pan and add precut veggies. (Be sure to drain any liquid from the veggies if prepared as a freezer meal.) Season veggies with salt and pepper, if desired, and sauté until cooked. Add cooked quinoa to veggies. Season to taste with salt and pepper. When cooled slightly, add fresh spinach. Top with sliced chicken and garnish with avocado and/or feta crumbles, if desired.

 

And there you have it!  We had company and  this meal made enough for 4 adults and one (very hungry) toddler and we had enough for leftovers for one more dinner! Since I had prepped everything previously and the meal just needed cooked – I was able to have dinner on the table in just about 30 minutes exactly! It tasted fresh, was full of flavor and was something DIFFERENT from our normal weeknight meals! This was definitely one we’ll be repeating in the future!

Night 2: (I preferred the salad – great way to fill up on those greens for the 21-day fixers!!!)

The freezer bags:

* Bag 1 – Chicken

2 lb chicken breast (thin sliced, butterfly style)
1/2 cup Wildtree Rosemary Garlic Dressing

Bag 2 – Veggies

  • 2 zucchini/squash diced 
  • 1 red pepper diced
  • 1 onion diced
  • 1 tablespoon Wildtree Garlic Grapeseed Oil (could use Olive Oil and Fresh Garlic to taste)

** The recipe called for orzo but I chose to swap out quinoa for a healthier, higher protein option!
