Brownie Batter

Ok I know this is going to sound too simple and too good to be true…but hear me out…

I really wanted a chocolate treat and I came across this in the challenge group I’m participating in along with 2000+ other Beachbody coaches and the creator of the 21-day fix/21-day fix extreme, Autumn Calabrese. They’ve been saying “no cheats” but luckily that doesn’t count Shakeology!!! YUMMMMMM!

WHAT YOU NEED:

  • 1 Scoop Chocolate Shakeology
  • 1 tsp coconut oil, melted
  • 1 tsp all natural Peanut Butter/PB2 (optional)
  • 2-3 TBS of water

WHAT YOU NEED TO DO:

  1. Melt the oil in the microwave for about 10-15 seconds
  2. Add the Shakeology (and PB)
  3. Add water 1 TBS at a time until you reach that “brownie batter” consistency!
  4. Try not to eat the bowl as you’re scraping every little bite off!!!
  5. If you’re patient enough, toss it in the freezer for about 15 minutes – OMG!

The shakeology would be your “red” and the coconut oil and PB if you’re using it would count towards a teaspoon. I actually just made half of one after dinner to satisfy that snacking urge (and because I only had 1/2 a red left!) and it was the perfect amount! My hubs indulged in a full scoop!

No joke – I have NEVER drank a shake so fast…and I’ve think I’ve had a lot of fabulous concoctions!!!  I got a cold headache twice and was a tiny bit sad when it was gone but my goodness it was delish!!!!

As is above – this would be:

1 RED, 1 GREEN, 1/2 PURPLE and 2 tsps for all my 21-day fix followers!!!

But I have played around with this and will say although the banana makes for a more smooth texture, the taste is fine without it!!! So after the first day I have been leaving out the banana. You can also use PB2 rather than the all natural PB if you prefer which will cut down on the calories/fat.

On the flip side I made this for my hubs with unsweetened almond milk (1 Yellow) and a full banana (2 purples) and it was literally like a Dairy Queen Blizzard!!! The pure almond extract is definitely what makes it!!!

Ok – so I often I talk about my challenge groups and how they’re such a great resource for support and motivation especially as someone begins their fitness journey and also as they continue! But they are also a great place for recipes….not only from me, as a coach, but everyone in the group! I have to thank Anna for sharing this sweet treat with us all!!!

This recipe is found in the 21-Day Fix and 21-Day Fix extreme nutrition guides but honestly I would have never made it on my own. I always made a different version of Chocolate Shakeology Pudding and saw no reason to try a new one. Well…let me just say, this is so smooth and tastes like a homemade chocolate mousse.

WHAT YOU NEED:

(makes 4 servings)

  • 1 1/2 scoops Chocolate Shakeology
  • 1 ripe medium avocado
  • 1 medium banana, cut into chunks
  • 1 cup unsweetened almond milk

WHAT YOU NEED TO DO:

1. Place all items into a blender, cover, blend until smooth (If too thick you can use additional almond milk)

2. Pour into 4 dessert cups; refrigerate for at least 1 hour, or until set (I missed this step the first time I made it, so I just used frozen banana and tossed it in the freezer for about 10 minutes…either way works!)

21-DAY FIXERS: 1/2 RED 1/2 YELLOW 1/2 BLUE

Let me just say, this will surely satisfy your sweet tooth craving!!!!

Ok – HOLD THE PHONE!

Yes, I LOVE SHAKEOLOGY – that’s no secret! I am still amazed that someone found a way to pack the nutritional value of 6 salads into a glass. To include digestive enzymes, probiotics, protein, antioxidants and nearly every vitamin and mineral your body needs in a convenient meal replacement shake that – GET THIS – tastes AhMAZING! It’s like magic!

But this stuff isn’t just limited to a meal replacement shake – it makes some incredible desserts!!!! And one of my all time favorites is Shakeology Pudding:

WHAT YOU NEED:

  • ¾ cups plain Green Yogurt
  • ¼ – ½ scoop Chocolate (Vegan or Regular) Shakeology
  • 1-2 TBS PB2 or All natural Peanut Butter

WHAT YOU NEED TO DO:

Combine the 3 ingredients into a bowl and stir until blended. If you want to get real crazy you can even toss in a few chocolate chips – but I think its good just the way it is!

This is a sure fire way to satisfy any sweet tooth craving!!! I usually opt for the lower calorie option and do 1 TBS of PB2 whereas my hubby opts for the 2 TBS of all natural PB – but it’s totally up to you! Either way it’s a delicious, high protein, 21-day fix approved (1 ¼ – 1 ½ reds plus a few of your tsps depending on how much PB or PB2 you use!!!)

Kit Kat Shakeology

Ok, ok, so we are dealing with something in my house that few women experience – my hubby cannot gain weight!? Only problems a man can have, right?! He actually recently started the Body Beast program after 2 rounds of P90 X and the additional workouts are really increasing his metabolism – he’s literally hungry ALL the time!

So while he’s trying to gain weight (healthily) and I’m trying to maintain we’ve been searching for ways to enjoy similar foods but while adding a bit more into his plate!

This Kit Kat Shakeology has been a daily occurrence for about 5 days running now but I make it two totally different ways. His is with almond milk—>mine is with water. He uses 2 TBS of all natural PB—-> I use 1 TBS of PB2. He uses 1/2 a banana —> I occassionally add in 1/4 of a banana- and with these little changes his comes in around 650 calories and mine is under 300 calories. We get the both of best worlds! One amazing shake that can be both a high calorie meal replacement shake, a low calorie meal replacement shake or something in between!

  • 2 tsp of unsweetened cocoa powder
  • 1 rice cake
  • 1/2 banana
  • 1 cup ice

WHAT YOU NEED TO DO:

Add all ingredients to the blender. Crush ice for about 10 seconds and blend until smooth consistency.

Black and White No-Bakes

So I made the nutty shakeology no bakes a while ago and thought they were a great alternative to regular cookies. I took them to a family reunion and people were amazed to see that they were all natural “healthy” cookies. So when my mom asked me what I wanted for my birthday I quickly responded with the no bake cookies! I’ll admit – my mom got to my house late in the evening and I quickly ate 4 cookies. I couldn’t believe how delicious they were – so much better than mine!!! I thought it was just because my mom made them but nope – she did something differently – she melted the PB and honey first and she did half chocolate and half vanilla shakeo – and oooooooo what a difference!!! I’m not sure if its a good thing yet or bad thing because I cannot stop eating them but I feel obligated to share!

I was even able to return the favor and as my mom prepped for her first marathon this past weekend I asked her what I could provide to help her – and of course she wanted the no bakes!!! I was happy to hear these little bites help provide her energy as she powered through her 26.2 miles! I still don’t think they were as good as my moms…but they did the trick!

Black and White Shakeology No Bakes

(Makes 30-32 servings, 1 Cookie each)

Total Time: 15 min

Prep Time: 10 min

Cooking time: 5 min

WHAT YOU NEED:

  • 1 Scoop Chocolate Shakeology
  • 1 Scoop Vanilla Shakeology
  • 1 cup all natural peanut butter
  • 1/2 cup peanuts
  • 1 cup quick-cooking rolled oats
  • 1/2 cup honey

WHAT YOU NEED TO DO:

  • MELT PEANUT BUTTER AND HONEY IN A MEDIUM SAUCEPAN.
  • AND SHAKEOLOGY  THEN OATS AND MIX WELL WITH A RUBBER SPATULA OR WOODEN SPOON.
  • SCOOP MIXTURE INTO 1-INCH SIZE BALLS (I FOUND THE PAMPERED CHEF SMALL COOKIE SCOOP TO BE A HUGE TIME SAVER HERE).
  • FLATTEN EACH BALL SLIGHTLY SO THAT IT IS SHAPED LIKE A TRADITIONAL COOKIE. AND THAT’S IT!
  • ENJOY 🙂
Optional: Roll cookie in crushed nuts, whole-grain graham cracker crumbs, or unsweetened coconut flakes
My advice – keep these in the freezer! This way you have to pull them out and let them sit for a few minutes before eating. It may help reduce eating them all at once!!!

I’ve set a little challenge for myself – no milk or banana in my daily shakeo for two weeks! And no more greek yogurt! Why??? Well I used to be good with sticking to 1/2 cup of milk and 1/4 of a banana…but that 1/2 cup has been creeping its way up there…and the 1/4 of a banana has been more like a 1/2 and although I know these are both “healthy” foods…I feel best when I avoid all milk and I feel less bloated when I pass on the banana. Same goes with the yogurt…plus with blueberries out of season I’m struggling to find that perfect combo! With these little changes I decided to come up with a new shakeo recipe to fill the void:

Caramel PB Chocolate Cheesecake Shakeology

WHAT YOU NEED:

12 ounces of water

1 Scoop Chocolate Shakeology

1 TBS Fat free/sugar free cheesecake pudding mix

1 TBS PB2

1 tsp caramel extract

Lots of ice!!!

WHAT YOU NEED TO DO:

Blend until you reach the consistency you like! I prefer to “crush ice” first followed by “blend” for about 30 seconds. Like most of my shakeos – I eat it with a spoon! Perfect post-workout breakfast!!! All this an clocking in at about 200 calories – I’ll take it!!!

High Protein Chocolate Peanut Butter Snack Bars

This has been me lately…my meals are spot on, largely in part because I make my meal plan each week, grocery shop, prep and stick to it! So that’s not the problem…the little treats on the other hand haven’t been so little!  I don’t know what it is but my sweet tooth is out of control! I think I use my daughter’s simple request to bake something as an excuse just so I can have some myself too!! I swear, I am totally fine when its not in my house but when its sitting on the counter – its like I lose all sense of self-control!

For example – we went to Bob Evans after church Sunday. And they just so happen to place those little boxes of cookies right at kid eye level. Naturally, my daughter reaches for a box of the M&M cookies – typical – but rather than just getting her what she asks for I grab the apple oatmeal ones, in my mind justifying because they have oats so they have to be the healthier choice and you got a “deal” if you bought two. Well after quickly inhaling not one, but two full cookies after lunch I turned the box over to see each one had 380 calories – not a typo – 380 CALORIES PER COOKIE – and I ate two! That’s just gross! I was so disgusted with myself yet repeated this the following day! At this point I told my hsuband to eat them or get them out of the house 🙂 Why does he seem to have such better self control when it comes to this stuff?!?!

So long story short – I needed to come up with a healthier, 21-day fix approved snack. I’ve made the shakeology nutty no bakes and LOVED them but wanted something different – so I snagged this out of the 21-day fix eating plan guide.

High Protein Chocolate Peanut Butter Snack Bars

Total Servings – 24, 1 bar each

One serving – one bar, counts as 1 yellow on the 21-day fix meal plan

WHAT YOU NEED:

  • 4 scoops Chocolate Shakeology
  • 2 cups quick-cooking old-fashioned rolled oats
  • 1/3 cup chopped raw peanuts
  • 1/2 cup golden raisins (I used a craisin and raisin mix bc that’s what I had)
  • 1 cup unsweetened almond milk
  • 1/2 cup all natural creamy peanut butter

WHAT YOU NEED TO DO:

Combine Shakeology, oats, peanuts and raisins in a large mixing bowl, and mix well

Add almond milk and peanut butter; mix well

High Protein bars mixed – this can take some time and muscle but its worth it!

Press mixture into 8×8-inch baking pan, cover and refrigerate for at least 3 hours.

Fall may not have officially started but the leaves are changing, football is in full force and there are pumpkins everywhere! My husband was pushing for an Apple Pie blizzard from Dairy Queen but my lack of self control told me one quick trip through the drive through and the chance of me leaving with only one in hand was slim. So I started thinking of a late night snack that would fill his void for ice cream and keep my goals in tact…and this happened…

Caramel Apple

*8oz of liquid (I used unsweetened almond milk but you could also use water, or a combo of milk and water)

*1 Scoop VANILLA Shakeology

*1/2 of a green apple, sliced

*1 tsp caramel extract

*Lots of ice!!!!

Blend until smooth and enjoy!!!

NOTE: I like to eat mine with a spoon, so I always fill with about 8-10 ounces of ice and “crush ice” on my blender fist then hit the “mix” for about 30 seconds. It comes out thick and smooth – just like ice cream but without all the added stuff!!!!

For all my 21-day fixers* out there: 1 red, 1/2 purple

* The use of milk rather than water would add approximately 40 calories (unsweetened almond milk) and part of a yellow container if following the 21-day fix meal plan.
