Egg Scramble

So who can relate:

Its Friday night, you want something quick and easy (and preferably healthy!!!) for dinner but you really don’t want to cave into ordering pizza….you have 5 minutes…options are???

-OR-

Its Saturday afternoon, you haven’t made it to the grocery store for the week yet but you have 5 minutes to throw lunch together – what do you turn to?

Enter—->Egg Scramble

This has become one of our go to meals! It is our meat less Friday dinner during lent, as well as veggie filled breakfast on the weekends and/or a quick, healthy, filling lunch! You can add as much or as little as you’d like and really you can’t go wrong!

WHAT DO YOU NEED:

(per person)

  • 2 eggs or 1 egg with 4 egg whites or 8 egg whites (1 red)
  • 1 cup chopped spinach (1 green)
  • 1/2 cup diced peppers, onions, asparagus (1/2 green)
  • 1/4 avocado (1 blue)
  • 2 tbs all natural fresh salsa (1/4 purple)
  • 1/4-1/2 cup shredded chicken or ground turkey (red – varies depending on the amount)
  • 1 slice toast (eziekiel is my favorite, my hubby opts for GF Udis but its also relish in a burrito! – 1 yellow)
  • slat and pepper to taste

WHAT YOU NEED TO DO:

  • Spray skillet with olive oil or nonstick spray and heat to medium/high
  • Sautee spinach, peppers, onions, asparagus and any other veggies you have on hand for 1-2 minutes.
  • Add egg

  • Cook for 3-4 minutes until cooked thoroughly

  • Serve alone or on top a slice of toast along with your favorite toppings!

There are so many options with this meal. Like I said above – its perfect for Meat-free Fridays and you can make as much or as little as you need! We often call it our “kitchen sink” meal where whatever we have left in the fridge at the end of the week gets tossed in the pan and mixed up! And if you happen to have any leftovers…they do reheat up well!

Its still hard to believe I’m one week shy of being an Insanity Max:30 GRADUATE! This program has been the most challenging fitness program I’ve ever done but I have to say…I’ve enjoyed every minute of it! Its all in the mind – believe you can and you will. Believe you can’t and well, you can’t!

My hubby recently started a hybrid of Body Beast and Insanity Max:30 so we have been able to join forces a few times. Even though he is still in month 1 he decided he would jump into the Friday Fight Round 2…talk about a happy Friday morning wake up call!!! I’m not 100% positive but his comment to me at about the 6 minute mark was something like “he said WHAT…this dude is insane” – but of course he continued to push though…and because he believed he could – he DID!

Not much can beat a sweaty SMOOCH ❤

I was fortunate to have a surprise visit from my mama this weekend and with most visits comes an early morning workout! This time Aubrie joined us as well so we had 3 generations, sweating, laughing, making memories and getting FIT – together!!! I don’t always do the optional Pulse workout but the timing was perfect this week! I always push myself harder when I work out with my hubby and the extra 10 minute ab attack really finished the week on a positive note!

With the final week staring me in the face I decided to make things a bit more simpler! I spent my Sunday planning my week and getting my meal plan together and focusing on reaching my goals! I really want to top all my prior max out times and I know in order to function at my max I have to fuel my body with the right foods.

I’m incorporating my new food obsession daily – man cakes – and sticking to basic, easy, balanced meals. We had a few social events this weekend that put me a little off track but I’m ready to focus and nail it this week!!!

This last week was a little different but challenging yet still!

I had an absolutely AMAZING weekend in the ‘burgh for Pittsburgh’s Super Friday and our Dream Team Celebration Saturday.

Of course we worked out…

So needless to say I needed a jumpstart for week 6 – enter a simple little cleanse – the 3-day REFRESH!

Sometimes its hard to get back in the swing of things. I’m a routine type of person. Keep me on my routine and I’m as happy as can be. Stray from that – and watch out! It wasn’t easy jumping back in…I could feel the bad nutrition choices lingering in my body but I knew the easiest way was to JUST DO IT – so I did!

Monday was a typical day and then I started the 3-day refresh on Tuesday. The guide says to do “moderate exercise” so I stayed with the modifier in Insanity Max: 30 on both Wednesday and Thursday but went full out Friday morning – what can I say I was feeling REFRESHED!!!

You really are eating all day long – its simple, vegan, small meals, some shakes and a few really good night sleeps! Trust me!

By Friday morning, the bloat was gone, I was down 3 pounds, 3 inches, rested and ready to continue on with my healthy eating habits!

These just goes to show you how important your nutrition is! I never missed a workout but that bloat was BAD! But hey – I’m back on track!!!

I wrapped up the week with a morning sweat mesh with my #1 by my side. We have a jam packed weekend so I got a jump start on my next week’s meal plan and off to music class and SAMs club we go!

Gluten Free Sweet Potato Brownies

I usually spend my Sundays with my family using nap time to meal plan and grocery shop for the upcoming week however I found myself with a quite a bit of produce leftover from the week on the verge of going bad. I don’t use the word “hate” very often but I really truly HATE wasting food!!!

Top of my must use list: 2 baked sweet potatoes and quinoa!

Using the two sweet potatoes was a pretty easy decision! I had remembered seeing a brownie recipe a while back and this seemed like the perfect opportunity to give it a try!!! My hubs has recently gone gluten free so I wanted to make sure it was something the entire family could enjoy!

Sweet Potato Brownies (Gluten Free)

WHAT YOU NEED:

  • Maegan Blinka, Meal prep Sunday, gluten free brownies, dairy free brownies, sweet potato brownies, healthy treat, healthy dessert, quinoa brownies, 1 Large or 2 small sweet potatoes
  • 3 eggs, whisked
  • 1/4 cup unrefined coconut oil, melted
  • 1/3 cup honey
  • 1/2 tsp vanilla extract
  • 3 TBSP Cooked Quinoa*
  • 3 TBSP Unsweetened Cocoa Powder
  • 1/2 tsp cinnamon
  • 1/4 tsp baking powder
  • dash of salt
  • 3/4 cup chocolate chips

*I had leftover quinoa in my fridge. You could also use quinoa flour or coconut flour as a substitute

WHAT YOU NEED TO DO:

  1. Bake your sweet potatoes (or if you’re like me use leftover ones!), peel skin and let cool
  2. Heat oven to 350 degrees
  3. Mash sweet potatoes and add: eggs, coconut oil, honey, vanilla
  4. Add dry ingredients: quinoa, cocoa powder, cinnamon, baking powder, salt and mix well
  5. Stir in chocolate chips
  6. Pour into 8×8 glass baking dish and bake for 30 minutes.

If you have a little helper like me that’s an extra bonus!

My only advice – Try not to eat the entire pan! I had 1/4 of the pan gone within minutes and had to hide it from myself in the microwave!

Black and White No-Bakes

So I made the nutty shakeology no bakes a while ago and thought they were a great alternative to regular cookies. I took them to a family reunion and people were amazed to see that they were all natural “healthy” cookies. So when my mom asked me what I wanted for my birthday I quickly responded with the no bake cookies! I’ll admit – my mom got to my house late in the evening and I quickly ate 4 cookies. I couldn’t believe how delicious they were – so much better than mine!!! I thought it was just because my mom made them but nope – she did something differently – she melted the PB and honey first and she did half chocolate and half vanilla shakeo – and oooooooo what a difference!!! I’m not sure if its a good thing yet or bad thing because I cannot stop eating them but I feel obligated to share!

I was even able to return the favor and as my mom prepped for her first marathon this past weekend I asked her what I could provide to help her – and of course she wanted the no bakes!!! I was happy to hear these little bites help provide her energy as she powered through her 26.2 miles! I still don’t think they were as good as my moms…but they did the trick!

Black and White Shakeology No Bakes

(Makes 30-32 servings, 1 Cookie each)

Total Time: 15 min

Prep Time: 10 min

Cooking time: 5 min

WHAT YOU NEED:

  • 1 Scoop Chocolate Shakeology
  • 1 Scoop Vanilla Shakeology
  • 1 cup all natural peanut butter
  • 1/2 cup peanuts
  • 1 cup quick-cooking rolled oats
  • 1/2 cup honey

WHAT YOU NEED TO DO:

  • MELT PEANUT BUTTER AND HONEY IN A MEDIUM SAUCEPAN.
  • AND SHAKEOLOGY  THEN OATS AND MIX WELL WITH A RUBBER SPATULA OR WOODEN SPOON.
  • SCOOP MIXTURE INTO 1-INCH SIZE BALLS (I FOUND THE PAMPERED CHEF SMALL COOKIE SCOOP TO BE A HUGE TIME SAVER HERE).
  • FLATTEN EACH BALL SLIGHTLY SO THAT IT IS SHAPED LIKE A TRADITIONAL COOKIE. AND THAT’S IT!
  • ENJOY 🙂
Optional: Roll cookie in crushed nuts, whole-grain graham cracker crumbs, or unsweetened coconut flakes
My advice – keep these in the freezer! This way you have to pull them out and let them sit for a few minutes before eating. It may help reduce eating them all at once!!!

I am such a sucker for oatmeal cookies – and these shakeo totally does the trick!!!

Meet: Chocolate Cinnamon Oatmeal Cookie Shakeology

  • 4 oz almond milk

  • 6 oz water

  • One scoop chocolate Shakeology

  • 1 tsp cinnamon

  • 1 tsp vanilla

  • 1/4 cup oatmeal

  • Ice to your liking – and BLEND!

NOTE: My hubs prefers the vanilla shakeology over the chocolate so I tweaked this to make it appeal to a vanilla fan:

Southwestern Quinoa Salad

Looking for something clean, healthy and full of flavor to take to your next picnic or family gathering?!? Look no further! This dish is your winner! Its loaded with black beans and quinoa to get you protein, mango for some sweetness and a little cilantro and some spices to jazz things up. And besides – it looks very pretty!

My family reunion is today and I wanted to make sure I took something that not only my own family would enjoy but everyone there and I wanted it to be a clean dish. A challenger of mine had shared her version of this recipe in one of my health and fitness accountability groups over Memorial Day weekend and  I had been waiting for a good reason to make try it for myself! Quinoa is a common side dish in my house but quite honestly, this one had a lot of chopping involved so I wanted to save it for a special occassion!

I’ll admit it wasn’t one of those “quick and easy throw together in 10 minutes” dishes but it was worth every minute in the kitchen. And thanks to my amazing hubby it really didn’t take too long with us tag teaming it!

So here goes:

Ingredients:

  • 15-ounce can black beans (rinsed very well and drained)
  • 1 cup cooked quinoa (according to package directions)
  • 1 cup fresh or frozen corn
  • 1 small red bell pepper, chopped
  • 1 cup chopped fresh mango (approximately 1 mango)
  • 1/4 cup finely chopped red onion
  • 1/2 cup chopped fresh cilantro
  • 1 small jalapeño pepper, seeded and finely diced
  • juice from 1 medium lemon
  • 1 1/2 tbsp extra virgin olive oil
  • 2 garlic cloves, minced
  • 1 tsp ground cumin

Directions:

Start by cooking the quinoa first (This could also be cooked in advance and refrigerated). While the quinoa was cooking, rinse the  black beans, cook the frozen corn, chop the red and jalopeno peppers, chop the mango and cilantro and dice the onion. (I like to save the onion for last because I struggle so bad with my eyes!!)

Add all items – the beans, quinoa, corn, bell pepper, mango, onion, cilantro, and jalapeño in a large mixing bowl.

Next, mix the lemon juice, olive oil, garlic, cumin, chili powder, and turmeric in a small bowl and drizzle it over the mixture and stir well.

Refrigerate until ready to serve.

(NOTE: This is best when mixed the night before so the flavors have the time to marinate!)

I’ll admit – despite wrapping this up around 11:00pm I had to taste it – it just smelled so good – and it tasted as good as I expected! Hoping the family enjoys it as well!

And to top it all off – this flavor packed side dish is both PiYO and 21-day fix approved. (I would count this as 1 yellow and 1 tsp – olive oil – even though there’s a bit of purple, green, red!!!)

Turkey burgers

I still remember the first time I suggested using ground turkey over ground beef for burgers…I got the most disapproving look from my husband! He’s usually pretty willing to eat whatever I suggest and has been okay with my turkey spinach meatballs but just wasn’t fond of the idea of a burger being made out of turkey…until now!

These burgers turned out so juicy and when topped with a little mashed avocado needed nothing else! We passed on the bun, served with some grilled veggies and brown rice – yummy!

Turkey Spinach Burgers – yields 10 burgers

2.5 pounds ground lean turkey

3/4 cup salsa

1 TBS minced garlic

3 cups chopped spinach

1/2 cup chopped onion

Mix all ingredients and form into patties. I prefer to make mine 4oz or 1/4 pound each. With this you should get around 10 burgers. Grill 4-5 minutes per side (checking to make sure no pink inside!)

Serve with your favorite grilled veggies and sides!

We are HUGE fans of making in bulk and freezing the leftovers for a future meal. We ended up with enough for our dinner and 2 more meals – SCORE!
