Follow your dreams

I’ve been home from Cancun for 4 days now and I am finally feeling like I am getting back to my routine.

The theme in my mind the past few weeks has really been DREAM! I feel like I am living a DREAM in a DREAM world but in reality this is my life! Perfect? Not even close…but fabulous in deed and I know I am exactly where I need to be!

Its just still a bit surreal to me how I even got to where I am today, how a year ago I was just hanging out with my kiddos on a daily basis, just making ends meet each month and going with the basics and while happy, I wanted more. I now know I was meant for something greater!!! Today, I’m living a much more fulfilling life, still home with my kiddos but was able to spend 5 days at an all-inclusive trip in Cancun Mexico which was EARNED simply by helping other people get healthier and helping other people chase their dreams too!

Ok – maybe “simply” is a bit of an understatement, but honestly – this “job” as a Beachbody Coach has filled my life with more blessings than I could have ever imagined and I am excited to share more about my trip!!!

After some back and forth about whether or not to take our kiddos with us on we decided Mexico wasn’t the best place for an almost 2 year old and almost 4 year old – so we switched gears and made it a Mommy and daddy only trip!!! Our first solo getaway since our Honeymoon and let me say – we enjoyed every minute of it!!!

My husband has been my BIGGEST supporter since Day 1 and I really wanted to thank him for the sacrifices he makes so that I can invest time in my challengers, my coaches and my growing team! This trip was just about him as much as it was for me!!!

Don’t get me wrong – we still enjoyed the time with our friends and team mates at the pool…

But even with all the parties and fun it was the reason behind it all…the reason I have had the success I had is because people have put their trust in me as their COACH – to help them, guide them and teach them ways to eat cleaner, exercise regularly, stick to a program and be accountable, especially when life throws those curve balls your way!!! I never realized the potential of this “business” when I first signed up as a coach “in hopes to make enough money to cover my monthly Shakoelogy” but I am forever grateful that I made the decision, took the leap, and made this a true BUSINESS that is allowing me financial freedom, travel and simply being surrounded by some of the most uplifting positive people I know!

So people keep asking me…HOW did you earn this trip? and CAN I earn a TRIP like this TOO???

How? I briefly mentioned it above – but in a nut shell…HELPING OTHERS! Helping 3-5 people each month get started on their health and fitness journey! Helping them pick a workout program that is going to help them get results and reach THEIR goals and helping others make changes in their nutrition…. to learn to FUEL their bodies with the proper foods and feel their absolute best…can earn you Success Club points. And through hard work, pushing my fears of rejection aside and sticking with a never give up attitude I was able to get off the waitlist and earn the trip not only for myself but for me and my husband!!!

While on this trip, I started and finished the book GIRLBOSS which was amazing by the way, and I then started a new book “You’re made for a God-Sized Dream” by Holley Gerth – and let me just say – this book is well worth your time! It will open doors and open your eyes to things you never saw before! Follow your dreams! You are made for big things – big dreams will come true if you’re willing to pursue them!!!

Cinnamon Roasted Almonds

I have had this “thing” for cinnamon lately..

IMG_0215I put it on my steel cut oats for some flavor, its the key to my Fruity MANCAKES and I love it in my morning shakeology to spice things up! Its one of those “free foods” and I keep finding ways to add it in! But my favorite taste of cinnamon easily has to be cinnamon roasted almonds!!!

Yeah, yeah, I know, not the cleanest thing out there but my oh my do I love them!!! We visited the Home Show in Pittsburgh last month and sampled some of those roasted almonds, pecans and cashews and I’ve been thinking of them ever since.

I know I’ll be able to snag them at the Buccos home opener…but I couldn’t wait for Monday! Aubrie was crafting during the little guy’s afternoon nap so I decided to whip these together!

I found some healthier recipes out there but I was going for taste and these hit the spot!!!

  • I egg white
  • 1 tsp water
  • 2.5 cups whole almonds
  • 2.5 TBS sugar
  • 2.5 TBS brown sugar
  • 1.5 TBS cinnamon
  • 1/4 tsp salt
  • parchment paper

WHAT YOU NEED TO DO:

  • Preheat the oven to 250 degrees.
  • Whip the egg white and water until bubbly in a medium bowl.
  • Add the almonds and stir until well coated.
  • Add the sugar, salt and cinnamon together in a separate bowl, then add to the coated almonds and stir until evenly coated (I added a lid to the mixing bowl and shook it up!)

  • Spread the almonds in a single layer on a baking sheet, covered with parchment paper.

  • Roast for 1-1.5 hours, stirring every15/20 minutes.
  • Allow to cool and store in air tight container

NOTE: You will want to eat all of these…at once. I recommend portioning them into baggies or small containers to avoid the temptation. They’re DELISH!!!!

Today marks 10 days out from Easter…the holiday of chocolate bunnies, sugary peeps, candy filled eggs, and temptations EVERYWHERE! I mean seriously – take a peak in the front door of Target…there is literally candy EVERYWHERE! Peanut Butter No Bakes

I am usually ALL ABOUT healthy, clean eating…even with my sweet treats! However when my one and only sister and first time mama-to-be asks me to whip up my old time specialties for her baby shower weekend, naturally I obliged!

Gluten free has to count for something right?!

WHAT YOU NEED:

Peanut Butter cookie, easy cookie, cookies in under 20 minutes, fast cookie recipe, Peanut butter no bake, gluten free cookie, Maegan Blinka,

  • 1/2 cup margarine
  • 2 cups All natural Peanut Butter
  • 4 cups of sugar (i know I know – WOWZERS!)
  • 1 cup milk
  • 2 tsp vanilla
  • 6 cups old fashioned rolled oats

WHAT YOU NEED TO DO:

  • In a large saucepan, combine margarine, milk, sugar over medium heat, stirring frequently.
  • Bring to a “rolling boil” – now this is the biggest part – a rolling boil means that there are large bubbles that do not go away when stirred.
  • Boil for 20-30 seconds (I usually set a timer. If you boil too long they will be dry but if you don’t do it long enough they won’t set up!)
  • Remove from heat, stir in vanilla, stir in peanut butter until smooth.

  • Add oats and quickly drop onto waxed paper. I have found a pampered chef cookie scooper is the fastest and easiest way to do this but a spoon will also work!

TIP: These cookies don’t actually “freeze” solid. I usually keep them in the freezer and its two fold. 1) They kind of taste fudge-like and 2) It keeps me from staring at them on the counter and inhaling an entire batch in one day!!!

Sitting here mid-March about to get breakfast ready for my family and thinking about how different today’s March morning is compared to years past…

For 6 years, my winter months were spent working…literally, all day, 7 days a week – weekdays – weekends! By the time March came I was so mentally exhausted, miserable from the way I had spent the several months prior and ready for a change, but I didn’t think I could make one! That was simply the way it was!
I remember when M-TH, 5:00 used to mean it was time to place the dinner order to prep for AT LEAST another 5 hours of work!

Auditing wasn’t exactly a glorious job but it was a good job. A great job in fact that allowed me to provide for my family. But…with the arrival of baby #2 I knew I couldn’t do it any longer.
2 years ago I endured my LAST “busy season”. I longed to be home with my family but at the same time we had established a lifestyle we were comfortable with. Leaving my career in auditing meant I would be living a DREAM come true as a Stay at Home Mom…where I was meant to be…with my babies…but it also meant financially, we were going to have to make some changes…changes we were all willing to make…but changes nonetheless!

Last February we had a medical scare with Colt that landed us two nights in Children’s hospital. Thankfully nothing serious came as a result but we did receive a hefty bill. I still remember my stomach turning as I was writing that check to cover what insurance didn’t. Beyond blessed to have our little boy back to health but after 10 months of no longer working we didn’t exactly have “extra money” laying around. The best thing that came of that scare…as I sat watching my sick little boy sleep I was scrolling Facebook and saw a post about the 21-day fix…I was intrigued, asked questions, and went for it….and well, the rest is history!

Within a few short weeks I was feeling amazing, my family was eating better, I had more energy than my crazy toddler and Kyle and I made a decision that I would sign up as a Beachboy Coach. Never expecting to turn it into a CAREER but rather hoping that I could offset the cost of our Shakeology that we knew was helping us lead a healthier life. I never imagined I would be able to even come close to replacing the income I used to make as an Audit Manager but as I sit here today I realized that these first 10 weeks of 2015 mirror the same income I was bringing home as a “part-time” Audit Manager working 60+ hours a week.

How did this even happen???

In a nut shell, its been CONSISTENCY, HARD WORK, DEDICATION, and simply SHARING what has worked for me and helping others do the same!

I’m not telling you this to brag in any way, shape or form…I am sharing this with you because I am BEYOND THANKFUL that someone else shared this opportunity with me…for if not, I do not know what my life would be like today!

Its Saturday afternoon, you haven’t made it to the grocery store for the week yet but you have 5 minutes to throw lunch together – what do you turn to?

Enter—->Egg Scramble

This has become one of our go to meals! It is our meat less Friday dinner during lent, as well as veggie filled breakfast on the weekends and/or a quick, healthy, filling lunch! You can add as much or as little as you’d like and really you can’t go wrong!

WHAT DO YOU NEED:

(per person)

  • 2 eggs or 1 egg with 4 egg whites or 8 egg whites (1 red)
  • 1 cup chopped spinach (1 green)
  • 1/2 cup diced peppers, onions, asparagus (1/2 green)
  • 1/4 avocado (1 blue)
  • 2 tbs all natural fresh salsa (1/4 purple)
  • 1/4-1/2 cup shredded chicken or ground turkey (red – varies depending on the amount)
  • 1 slice toast (eziekiel is my favorite, my hubby opts for GF Udis but its also relish in a burrito! – 1 yellow)
  • slat and pepper to taste

WHAT YOU NEED TO DO:

  • Spray skillet with olive oil or nonstick spray and heat to medium/high
  • Sautee spinach, peppers, onions, asparagus and any other veggies you have on hand for 1-2 minutes.
  • Add egg

  • Cook for 3-4 minutes until cooked thoroughly

  • Serve alone or on top a slice of toast along with your favorite toppings!

There are so many options with this meal. Like I said above – its perfect for Meat-free Fridays and you can make as much or as little as you need! We often call it our “kitchen sink” meal where whatever we have left in the fridge at the end of the week gets tossed in the pan and mixed up! And if you happen to have any leftovers…they do reheat up well!
