Clean Broccoli Coleslaw salad

During my grocery shopping last weekend I picked up a bag of shredded broccoli/cabbage/carrot blend with this vision of grilled shrimp tacos and a crunchy flavorful slaw to top it off —- problem was — I didn’t get anything else to actually make the slaw!

So I did what anyone else would do and I started browsing Pinterest! Problem was I was always missing an ingredient or 2 from all of the ones I found and I wanted to make sure this was CLEAN and preferably 21-day fix approved – so I just made one up!

WHAT YOU NEED:

  • 6oz bag of broccoli/cabbage/carrot shredded mix
  • 4 TBS plain greek yogurt
  • 2 TBS honey
  • 1 lemon, juiced
  • 2 TBS Balsamic Vinegar
  • 3-4 TBS pine nuts (or peanuts, almond slivers, sunflower seeds, etc…)
  • 3-4 TBS raisins or craisins (optional)
  • Avocado (optional)

WHAT YOU NEED TO DO:

  • Whisk together: yogurt, honey, lemon juice and vinegar
  • Add: Broccoli/Coleslaw mix
  • Mix thoroughly
  • Add nuts and raisins
  • Refrigerate for 30-60 minutes.

Serve alone as a side or as a topping for some fish & shrimp tacos or grilled chicken wraps!

I am happy to say I got two thumbs up from my hubby!!!

I think going forward I would add some sliced avocado and perhaps some jalopenos for a little kick and go with the raisins vs. the craisins. But all in all – it was a hit and the leftovers were even better!!!

3-day Refresh RESULTS

Bloated, tired, stuck in a vicious sugar cycle and looking at carbs as if they were the only thing that mattered….

That’s pretty much how I felt last Sunday night!

Mind you I exercise daily and I am usually a very clean eater – my portions are pretty good, I follow the 21-day fix nutrition guide daily, I limit my gluten and dairy and I like to keep bal2015-06-14 18.16.44ance however that balance was slightly tipped after a week long vacation in the OBX and I didn’t quite pull things together in the week that followed. Toss in a weekend visit with some family and a Pittsburgh Pirate game and I was in NEED of a little detox. Enter: 3-day Refresh!

I’m no stranger to this and in fact I’ve done it 4 times before usually yielding pretty good results. But every time I had done it I found myself still sneaking a little bite of this or that or thinking 3 spoonfuls of oatmeal won’t hurt anything and this time things were going to be different. I believed that I could do this – follow the plan – and truly feel the benefits of a healthy and effective cleanse – and that belief is what carried me through!

Each morning I would workout (mild to moderate exercise is recommended and I was able to stick with my regular 21-day fix schedule without a problem!!!)

Breakfast was always my Shakeology and fruit. Sometimes I would blend it but I snagged this watermelon for my kids and after taking the time to cut it up I just had to taste it so I swapped my planned banana for watermelon, shook up my Vegan Tropical Strawberry Shakeology with some water and had one tasty, filling breakfast!!!!

The Fiber sweep came as the mid morning snack and while the first few times I thought this was pretty bad, this time I found it easy breezy! Shake and chug and you’re done!

In addition to my challengers, I was very fortunate to have my mother in law doing this with me. We figured we would enjoy the Pirate game together on Sunday and then hold each other accountable through the next 3 days and let me just say – that worked out PERFECTLY! The support made a big difference and I really think that played a role in keeping me on track and focused to COMMIT to this – 100%!

I know some people think they need to wait to do this 3-day program when they’re going to be home for 3 days and have an empty social calendar but to be honest….a little bit of planning paired with some willpower and perhaps a sprinkle of flexibility and this is easy breezy!!!

*We spent a morning at Seabase – an indoor kids play center where we treated the kiddos and allowed them to pick their own lunch and I resisted the leftover EVERYTHING!

*My mom visited for two nights and I was able to cook dinner for everyone else and still stick to my plan too

*We did a full day at Idlewild – I didn’t tough the french fries or the hot dog or the slurpee or even think twice about indulging. I did have to self-convince myself that I already know what ice cream tastes like – so why sabbotage my success? I’m really happy with my results! to be honest I have no idea ho
w many pounds or inches I lost but I can tell you that these shorts from last summer that I squeezed
nto Monday morning fit a heck of a lot better today!

I was full of energy throughout the full 3-days. Sure there were moments I was hungry but I drank my water and the hunger would pass. The bloat is gone and I have a huge sense of self-satisfaction knowing I DID IT!

I committed, I followed through, and I feel great!

Chron’s Disease NO MORE!

First off I want to thank all of my family, friends and followers for the prayers and thoughts these last few days as I prepped and got another colonoscopy today!  And extra special thanks to my grandparents who kept my kiddos so I could get this all checked out!!!

For my new followers: A bit of a background…

I suffered through belly pains and various stomach issues through college and against my will…with a little extra nudge from my mom…I gave in – and in the 3 days between my college graduation and moving to the beach I got the dreaded colonoscopy which determined I had Chron’s Disease. Me. 21-years old. In what I thought was pretty decent health…diagnosed with a “disease”.

Seemed crazy but there wasn’t much I could do…or I didn’t think there was much I could do! I got the prescribed, very expensive meds that I would take 3x a day and off to OCMD I went.

In all honesty – I didn’t exactly take care of myself while living at the beach! And that showed through the constant issues I had. I would find myself leaving places suddenly to go home and curl up in a ball on the bathroom floor. It was AWFUL! And this cycle continued for a few years. If I had too much dairy, alcohol, veggies or breads and pastas my body would suffer! I learned the big “trigger foods” but still had my fair share of issues because there were also the “no rhyme or reason” issues too!!! I would continue my annual colonoscopy that would typically show no change…I wasn’t getting worse but I wasn’t getting any better either!

7 years

2 kiddos

and a wealth of mom-knowledge later and I started making HEALTHIER changes in my life that were doing more than just shrinking my waistline.

I started EXERCISING regularly…I started EATING balanced, clean foods – with limited dairy, additives, sugars, and gluten…and I incorporated SHAKEOLOGY – a nutrient dense superfood meal replacement shake that was giving my body superfoods I couldn’t find otherwise. So today was the day…I prepped (which I have to say either I am growing up or its not nearly as bad as it used to be!!!!), I went in, and the doctor was more than pleased!!! He told me on a scale of 1-10 my Chron’s is “barely a 1” – EEEEEK!!!!

While I will always carry the risk and it could come back…as long as I continue doing what I’m doing and feeling the way I’m feeling I am GOOD TO GO!!!

I am forever grateful that I joined my very first challenge group last year, that I decided to INVEST in my health and commit to this lifestyle. I have no clue where I’d be if I didn’t – but I don’t ever want to know!

21-day fix week 1 Recap – prepped for week 2

One week down…2 to go!!!!

I’ll be honest…I thought I was kind of sort of going to breeze through this program since I had been used to the Extreme program however…that was not the case!!!

This week really challenged me but-I did the best I could, used the highest weights I felt I could handle and when I needed to…dropped down!

I had one small hiccup on Tuesday as I found myself with what I self-diagnosed was turf toe. Out of NOWHERE my left big toe was red, hot to touch, swollen and very painful. I asked around and while the general consensus was gout – I have pretty much zero of the common causes for gout and much more likely to be turf toe.

I changed up my planned workout schedule by going with Pilates on Thursday (with lots of modifications and one-footed planks) and then Lower Fix Friday and Cardio Saturday at an event in my hometown ran by one of my coaches. I will say I love the flexibility

Yes – you read that right – this 29 year old heathy mama has a scheduled COLONOSCOPY!!!

After having huge successes last year with the addition of my superfood magic potion Shakeology and the switch to clean eating I was completely taken off all of my Chron’s disease meds and this will determine whether or not I can forgo these lovely procedures until I hit 50 like the rest of the population!

Spicy Quinoa Zucchini Bowl

Looking for a healthy, clean, 21-day fix approved lunch in less than 5 minutes?

Try this little mash up!

WHAT YOU NEED:

Zucchini

Ground Turkey

Cooked Quinoa

hot sauce of your choice

WHAT YOU NEED TO DO:

Heat skillet over medium heat. I spritzed the pan with olive oil

Using a VEGETTI or other vegetable spiralizer, make your “noodles” and add to the pan. I counted my one zucchini as one GREEN although its likely a bit more.

Add 1 RED of ground turkey and 1 YELLOW of quinoa – this is where the meal prep Monday really comes into play!!!

Cook for an additional 2 minutes until heated thoroughly.

Top with a few drops of your favorite hot sauce – and ENJOY!

This meal is one that can be doubled or tripled for as many servings as you need or you can even prep in full at the beginning of the week and have it all ready to grab and go!

I always try to keep cooked ground turkey, cooked quinoa etc. for a quick and easy meal!!! And while I kept it simple with the zucchini you could also add in other veggies like tomatoes and spinach or rather than hot sauce try salsa and/or avocado for a little Mexican twist!!! 

Get creative, have fun with it! Remember – clean eating doesn’t have to be boring!!!

Here we go again…21 Day Fix Week 1

I decided to take it back to the basics…back to the program that changed my life, that got me hooked on a healthy, fit and balanced life!!! 2015-06-01 05.57.27

—–>That helped me learn that dedicating 30 minutes to exercise daily will improve more than just your waistline.  

—–>That helped me learn about portions and what types of food choices would FUEL my body and not only get me the results in terms of numbers but maximize the way I feel on the inside too!

I’ve been a bit lax and a bit too comfortable and slowly I’ve been getting away from my normal 80/20 maintenance rule and its been more like 70/30 or even 60/40 on the weekends I am feeling and seeing the side effects!

So…Today not only marks day 1 for my challengers but also for myself – to recommit – and together we will be COUNTING DOWN TO SUMMER with the 21-day fix.

I got too caught up in my role as a coach that I forgot to be a challenger too!

So here it goes:

21 Day Fix Meal Plan Week of 6_1_15 imageYou’ll see I tend to eat the same types of foods throughout the week…it makes it easier to plan, easier to prepare and easier to adjust when I’m away from home! We are busy busy busy as I’m sure most of you are too…so what I’ve learned is to stay on track you have to be prepared! I will plan to make my Mancakes the night before so they’re ready to go as I head to the park etc with my kiddos.. I also  planned for an easy to pack apple and almond afternoon snack! No excuses…Summer is on the way!!!
