Want to know a secret? – I don’t really like to cook.
Baking – that’s a different story…but when it comes to cooking – I cook to keep my family alive and food in our belly…so you can imagine how much I love the good old “toss in the crockpot and turn off in 8 hour” meals.
Whether you’re short on time after work – before the activities – after school – before the homework – after relaxing – before bed —- to spend time COOKING – I’m here to help!!!

This group is designed to help you with those weekly meal plan ideas, provide some fresh, clean, crockpot meals that will not break the bank but will keep you and the family happy and full!

We’ll also share some basic healthy living tips, balance in and out of the kitchen and some ways to make the best of your leftovers!!!

Here’s how it will work:

I will provide the meal plan by Friday September 9th

For 5 Days (beginning September 12th) I will post the recipes for the day along with clean eating tips to help you make the best of this group!

Crockpot Burrito Bowls

Its BACK TO SCHOOL and back to the crockpot life!

Our evenings are busy and I’m sure your evenings are too!

This was a simple meal that can really be tweaked and served different ways to meet your and your family’s likes and dislikes!

WHAT YOU NEED:

  • 2 pounds boneless, skinless chicken breasts about 4 large breasts
  • 1 large onion, diced
  • 1 red pepper, diced 
  • 4 gloves of garlic, minced
  • 1.5 TBS fajita seasoning 
  • Sea salt and ground pepper to taste
  • 4 cups of low-sodium chicken broth
  • 1 28 oz can of diced tomatoes
  • 1 can of black beans, drained and rinsed
  • 2 cups of whole grain brown rice

Optional:

  • Shredded colby jack cheese (optional)
  • Greek Yogurt (for sour cream substitute)
  • Tortilla chips for a crunch!
  • Crockpot liner for easy clean up (highly recommended)
  • Avocados/Guacamole
  • Fresh Spinach (serve as a salad)

WHAT YOU NEED TO DO:

  1. Line crockpot with liner
  2. Place chicken breasts in crockpot and cover with chicken broth, canned tomatoes, diced onions and peppers, minced garlic,fajita seasoning sea salt and pepper.
  3. Cook on low for about 6 hours.
  4. Remove and shred chicken breasts from crockpot. 
  5. Turn slow cooker to high and stir in rice and black beans.
  6. Let cook approximately one hour on high, or until rice is tender.
  7. Add chicken back in, cook for 20 minutes on high, or until chicken is warm.
  8. Serve with toppings of your choice
  9. ENJOY!

Serving Size: 1.5 Cups

Do you ever get to the point of doing something repeatedly to where you barely have to put forth the effort to take action?

Two weeks ago – before beginning the PIYO program – I felt like that.

Don’t get me wrong, I absolutely LOVE the 21-day fix. The workouts are spot on and the nutrition guide cannot be beat but – after doing it for so long – I needed a change and I am so thankful I went with PIYO! Its low impact yet still intense…so I am a nice sweaty mess at the end which always help support that I am getting in a good workout!

In just these first two weeks I am noticing a significant improvement in my strength, flexibility and there’s a wee bit of ab definition starting to pop through – which is pretty darn exciting!

I have been following the “strength” workout calendar and am 1/4 of the way through the 8 week program.

I enjoy all the focus the core and the fact that I don’t need any equipment – just ME!

My tricep pushups are now done with ease.

I can hold my poses with more stability and focus.

And my daughter even likes to pop in here and there for some fun!

I have decided to stick with the 21-day fix meal plan throughout the program for a few reasons: 1) Its what I know. Its how I look at food and its how I think about nutrition. 2) It works for me! And honestly it will work for just about anyone but I know what foods maximize my mentality, my functionality and my energy levels and I like the way I feel on this program! 3) Its easy for me…I have been eating clean, balanced portions for over a 18 months now. This is how I see nutrition plus the containers are pretty cute too 🙂

4) It allows me to schedule in some treats and cheats here and there and that BALANCE is key in my success for maintaining a healthy and balanced lifestyle! I sure do love my cookies!!!

People are always asking about meal planning and trust me, I get it, it is intimidating but I promise once you get into the swing of things its just a party of your week!!!

Clearly – I repeat a lot of the same meals! It makes my shopping, prep and day to day decisions easier – so why complicate things?!?! I like to prep in advance and use my crockpot AT LEAST once a week (hello salsa chicken!!!)

Plus I’ll admit – all my challengers really help keep me on my toes and committed to my daily healthy lifestyle so I can lead by example for all of them! Its a combo effort no doubt!!!

Quick, easy, delicious dinner the whole family can enjoy!

 

I love quesadillas and I absolutely LOVE eating out at Mexican restauarants but truth be told – I cannot control myself with the chips and salsa!!! This dish brings a little mexican back to home without all those added calories! You can easily adapt the ingredients to fit your family’s preferences but these were a big hit for us!

BUFFALO CHICKEN QUESADILLAS

Ingredients:

(serves 2)

2 cups spinach

6 oz shredded chicken**

2 whole wheat or 4 corn tortillas

1/2 of an avocado, mashed

Buffalo chicken quesadillas, spinach quesadilla, clean eating, weekday meal

 Directions:

Heat skillet over medium/high heat – spray lightly with olive oil

Next, sautee the spinach, flipping continuously

Buffalo chicken quesadillas 6 spinach

Then, remove spinach, and in the same pan, cook chicken with 1 TBS of red hot

Remove from pan.

Spread the mashed avocado on half the quesadilla, top with cooked spinach and chicken.

And there you have it! One quick easy healthy filling lunch quesadilla!

21-DAY FIX CONTAINERS: 1 RED (CHICKEN) 1 BLUE (AVOCADO) 1 YELLOW (TORTILLAS) 1 GREEN (SPINACH)

**I like to use a rotisserie chicken or I’ll cook a bunch in the crockpot with some lemon juice, sea salt and water for 8 hours on low and then shred and freeze in individual portions. Makes for a quick additIon to any meal!!

Crockpot – Apple Chicken with sweet potatoes

Cooking healthy can be a challenge, especially during the week!

My kids are at that age where we run all day long, non stop and you cannot turn your head for a second or Colt is up on the table or pulling all the toilet paper out of the bathroom!

So…I use a lot of crockpot meals! This one is one of my favorites because it can easily be doubled and leftovers can be used for another dinner or lunches later in the week! Plus its super easy and full of flavor! And 21-day fix approved!

Makes 4 servings

WHAT YOU NEED:

  • 2 sweet potatoes
  • 1 pound boneless, skinless chicken breasts
  • Sea salt and cracked black pepper
  • 2 cloves of garlic, minced
  • 1/2 cup chopped red onion
  • 1 cup unsweetened applesauce
  • 2 teaspoons apple cider vinegar

WHAT YOU NEED TO DO:

1. Layer the sweet potato chunks and chicken breasts in the bottom of the crockpot

2. Season with salt and pepper

3. In a small bowl, stir together the garlic, red onion, apple sauce and vinegar

4. Pour the mixture over the chicken and sweet potato chunks

5. Cover and cook on low 6-8 hours until the chicken breasts are tender

6. Serve with a vegetable or side salad (so you can get in your green container for all you 21-day fixers!) or over brown rice

I also like to use the Reynolds crockpot liners for easy clean up!!!

21-DAY FIX: 1 SERVING: 1 RED (CHICKEN) 1 YELLOW (SWEET POTATO)

I would count the applesauce as 1/4 of a purple or just the orange for the day!
