Sitting here mid-March about to get breakfast ready for my family and thinking about how different today’s March morning is compared to years past…

For 6 years, my winter months were spent working…literally, all day, 7 days a week – weekdays – weekends! By the time March came I was so mentally exhausted, miserable from the way I had spent the several months prior and ready for a change, but I didn’t think I could make one! That was simply the way it was!
I remember when M-TH, 5:00 used to mean it was time to place the dinner order to prep for AT LEAST another 5 hours of work!

Auditing wasn’t exactly a glorious job but it was a good job. A great job in fact that allowed me to provide for my family. But…with the arrival of baby #2 I knew I couldn’t do it any longer.
2 years ago I endured my LAST “busy season”. I longed to be home with my family but at the same time we had established a lifestyle we were comfortable with. Leaving my career in auditing meant I would be living a DREAM come true as a Stay at Home Mom…where I was meant to be…with my babies…but it also meant financially, we were going to have to make some changes…changes we were all willing to make…but changes nonetheless!

Last February we had a medical scare with Colt that landed us two nights in Children’s hospital. Thankfully nothing serious came as a result but we did receive a hefty bill. I still remember my stomach turning as I was writing that check to cover what insurance didn’t. Beyond blessed to have our little boy back to health but after 10 months of no longer working we didn’t exactly have “extra money” laying around. The best thing that came of that scare…as I sat watching my sick little boy sleep I was scrolling Facebook and saw a post about the 21-day fix…I was intrigued, asked questions, and went for it….and well, the rest is history!

Within a few short weeks I was feeling amazing, my family was eating better, I had more energy than my crazy toddler and Kyle and I made a decision that I would sign up as a Beachboy Coach. Never expecting to turn it into a CAREER but rather hoping that I could offset the cost of our Shakeology that we knew was helping us lead a healthier life. I never imagined I would be able to even come close to replacing the income I used to make as an Audit Manager but as I sit here today I realized that these first 10 weeks of 2015 mirror the same income I was bringing home as a “part-time” Audit Manager working 60+ hours a week.

How did this even happen???

In a nut shell, its been CONSISTENCY, HARD WORK, DEDICATION, and simply SHARING what has worked for me and helping others do the same!

I’m not telling you this to brag in any way, shape or form…I am sharing this with you because I am BEYOND THANKFUL that someone else shared this opportunity with me…for if not, I do not know what my life would be like today!

Melissa joined my New Year, New You Health and Fitness Accountability group and didn’t nothing short of go ALL IN!!!

She truly is what I would refer to as the “perfect challenger”- now was she perfect with everything for 60 days straight?! Of course not… but she did do exactly what I would hope for with each of my challengers: she committed to the program, she committed to herself, she committed to drinking Shakeology daily and she committed to holding herself accountable by checking into our support group EVERY DAY!!!! And well-as you can see the results followed!!!

Here is what she had to say about her journey: 

“I have lost 19 pounds; 12 of my pounds were lost doing T-25 for the first 30 days and 7 of my pounds were lost next with the 21 Day Fix. In these 60 days, I have learned about meal prep, balanced eating, making healthier choices for food on a daily basis, etc.. Yes, I do eat and I eat more than I did before I started my journey! Egg Scramble

So who can relate:

Its Friday night, you want something quick and easy (and preferably healthy!!!) for dinner but you really don’t want to cave into ordering pizza….you have 5 minutes…options are???

-OR-

Its Saturday afternoon, you haven’t made it to the grocery store for the week yet but you have 5 minutes to throw lunch together – what do you turn to?

Enter—->Egg Scramble

This has become one of our go to meals! It is our meat less Friday dinner during lent, as well as veggie filled breakfast on the weekends and/or a quick, healthy, filling lunch! You can add as much or as little as you’d like and really you can’t go wrong!

WHAT DO YOU NEED:

(per person)

  • 2 eggs or 1 egg with 4 egg whites or 8 egg whites (1 red)
  • 1 cup chopped spinach (1 green)
  • 1/2 cup diced peppers, onions, asparagus (1/2 green)
  • 1/4 avocado (1 blue)
  • 2 tbs all natural fresh salsa (1/4 purple)
  • 1/4-1/2 cup shredded chicken or ground turkey (red – varies depending on the amount)
  • 1 slice toast (eziekiel is my favorite, my hubby opts for GF Udis but its also relish in a burrito! – 1 yellow)
  • slat and pepper to taste

WHAT YOU NEED TO DO:

  • Spray skillet with olive oil or nonstick spray and heat to medium/high
  • Sautee spinach, peppers, onions, asparagus and any other veggies you have on hand for 1-2 minutes.
  • Add egg

  • Cook for 3-4 minutes until cooked thoroughly

  • Serve alone or on top a slice of toast along with your favorite toppings!

There are so many options with this meal. Like I said above – its perfect for Meat-free Fridays and you can make as much or as little as you need! We often call it our “kitchen sink” meal where whatever we have left in the fridge at the end of the week gets tossed in the pan and mixed up! And if you happen to have any leftovers…they do reheat up well!

Baked and Broiled Salmon

I don’t mean to toot my own horn but I rarely think my meals qualify as “restaurant quality” however this salmon, as simple as it was, was just that!!!

It only took a handful of ingredients, it was clean, gluten free, 21-day fix and 21-day fix extreme approved and literally mouth watering!!!

WHAT DO YOU NEED:Maegan Blinka, Baked Salmon, Broiled Salmon, Lemon Salmon, Easy Healthy quick salmon, gluten free salmon recipe, fast and healthy salmon recipe, no meat fridays, meatless monday meal ideas, clean salmon recipe

  • 2-3lbs salmon (fresh or frozen is fine, I like to make a lot so I can have throughout the week!)
  • 2 lemons, 1 sliced, 1 to juice
  • 1TBS olive oil
  • 2-3 gloves minced garlic
  • Himalayan Salt and black pepper (to taste)

WHAT YOU NEED TO DO:

  • Preheat oven to 375
  • Line pan with foil
  • Lay salmon on top of foil, drizzle with oil and/or spritz entire filet with oil
  • Rub the minced garlic into the salmon
  • Sprinkle salt
  • Squeeze lemon juice over salmon filets
  • Lay sliced lemon on top
  • Bake for 15-20 minutes then finish off with 3-5 minutes under the broiler

Now don’t forget the last step…the crispness of the broiler was where it all came together!!!

21 Day Fix Extreme Results

Last Sunday I wrapped up my first round of the 21-day fix extreme. To be honest, at first, I felt like I totally failed. My weight remained the SAME. Unchanged in 3 weeks with what is truly one of the most amazing programs combining effective 30 minute at-home workouts with easy to follow nutrition. You get a little bit of everything but I didn’t get the “extreme” results that I’ve seen others share…

So how did this happen…I didn’t follow the nutrition! I started this program looking for ABS and although I still believe this program will help me get there…it didn’t happen, not this time. I let life events get in my way…stress, personal health issues, social get togethers…my WHY wasn’t big enough. But at the same time – I’m still HAPPY with my results even though I didn’t meet my initial goal of killer ABS.

^I did lose an inch off my waist, belly button and hips.
^I learned that cod and tilapia at 10am can become a meal and cold veggies travel well smile emoticon
^I learned that one pound of cinnamon roasted almonds in 3 days will make you feel extremely bloated!
^And coconut oil is a staple in my daily life!

So while I’d love to show you an amazing 21 day transformation – I can’t…I don’t have one! But what I can share is something else this program helped me realize. As I scanned through my before and after pictures and my stats I realized something that I didn’t realize at the beginning. I actually started this program 2 pounds HEAVIER than I was a year ago when I wasn’t even working out or eating clean – say WHAT?!?!

On the right: This February the day before I started the 21-Day Fix EXTREME…a year into my own journey as a Beachbody coach working continuously to be the best version of me. Happy? Heck yes! Healthy? You better believe it!!!!

So of course I had to do an “official” comparison. So below you will see my before pictures for both the 21 Day Fix  and 21 Day Fix Extreme and the bottom pictures show what each program did for me…in just 21 days!  I am focusing today on measuring my success on what I can do:

**I can carry the 70+pounds of my kiddos on my hips, up and down the stairs with ease…
**I can give my kiddos horsey rides all throughout the house…their giggles alone are enough to help me stay HEALTHY
**I’ve learned to BALANCE..we bake cookies and we bake sweet potatoes…we go out for pizza and we go out for delicious salads
**We exercise, we have fun, and we live our life to its fullest and I help others do the same!!!

There’s always a story, there’s always more than meets the eye – DIG DEEP and find what you’re living for – what makes your light SHINE BRIGHT.

For me…its my health and happiness!

I still think I can get the results I’m dreaming of and I’m going to give it another go! We have lots of fun and some family travels coming up and we also have our ALL EXPENSE PAID vacation to Cancun with my Beachbody family in April…so I will be doing this again and I will get those CUT ABS!!!

I am so excited to share our team’s goal and focus for the month of March…

A year ago, my fellow coach, Katy Ursta, was diagnosed with stage 4 Lymphoma but this wife and  mama of 2  wasn’t going to let it ruin her life or even slow her down!!! Upon diagnosis, she immeditately began 12 tough rounds of chemotherapy, every other week, for 24 weeks.  As a health and fitness coach, she struggled with the concept of being sick, asking herself  “who would want me as a coach”? What she never realized is what an inspiration her story would be for those around her!

Although sick, and tired, and unsure of what would lie ahead, she didn’t stop…she was consistent!!! Before and after every chemo treatment – she would SWEAT!  Sweat for something bigger, sweat for those who couldn’t sweat and simply, SWEAT IT OUT! It wasn’t easy and not always pretty but she did it for herself and those affected by the horrible “cancer”. Throughout this tough time she learned that sometimes you just have to find the good every situation and she truly did TURN HER MESS INTO HER MESSAGE which in turned began to inspire people all over the country and I am beyond happy to share that she is officially in remission and CANCER FREE!!!

Her story is real, its inspirational, its unique and it has helped to take her on a new journey as she has been NOMINATED AS PITTSBURGH WOMAN OF THE YEAR!!!

Our goal is to help Katy her reach her goals by giving as much as possible to help other families battling and struggling through this expensive and terrible illness through LLS (Leukemia Lymphoma Society), support those who we know personally that fought these blood cancers, and also support Katy during her campaign for Pittsburgh Woman of the Year!

Quinoa Turkey Meatloaf

Turkey Meatloaf – 21 Day Fix Extreme Style, aka, Gluten Free!

This turkey meatloaf recipe was a hit in my house!!! We have been primarily gluten free for the past 6 months now and while neither my husband or I have a “gluten allergy” we both tend to just feel better when we avoid it! Luckily our clean eating lifestyle has made the adjustment pretty easy and why I absolutely loved this Turkey Meatloaf recipe that uses Quinoa opposed to the traditional breadcrumbs! Its simple, clean, and if you’re like me…you can easily double this up and make an extra one to freeze or enjoy throughout the week as a second dinner and/or lunches!

Turkey Meatloaf

Makes 8 servings, 1/8 meatloaf each 

21 Day Fix & Fix Extreme Container equivalents: 1/2 Purple, 1 red, 1/2 yellow

WHAT YOU NEED:

  • 2 lbs raw 93% lean ground turkey
  • 1 cup all natural-mild salsa
  • 1 cup cooked quinoa, cooled
  • 2 large eggs, lighly beaten
  • 3 cloves garlic, finely chopped
  • 1 tsp sea salt or Himalayan salt (Mineralize)
  • Ground black pepper (to taste, optional)
  • Fresh chopped parsley (for garnish, optional)

WHAT YOU NEED TO DO:

1. Preheat oven to 375 degrees F (190 C)

2. Combine turkey, salsa, quinoa, eggs, garlic, salt, and pepper in a large bowl; mix well by hand or with rubber spatula (I used that little gadget from Pampered Chef and it worked FABULOUS – I am not a mix by hand type of girl and this did the trick!!!)

3. Shape mixture into shape of a loaf and place on engrossed 13×9 inch baking pan (I actually used a pan that has the grates so the grease will drip down off)

4. Bake for 60 to 70 minutes, or until center is no longer pink and meat is cooked through.

5.  Let stand 10 minutes before serving

6. Garnish with parsley

TIP: Cut cooked meatloaf into single servings and freeze in single resealable plastic bags for future meals! 

I really liked the consistency of the meatloaf but next time I will likely add in some chopped peppers and spinach just because I like to sneak in those greens any chance I get!

Brownie Batter

Ok I know this is going to sound too simple and too good to be true…but hear me out…

I really wanted a chocolate treat and I came across this in the challenge group I’m participating in along with 2000+ other Beachbody coaches and the creator of the 21-day fix/21-day fix extreme, Autumn Calabrese. They’ve been saying “no cheats” but luckily that doesn’t count Shakeology!!! YUMMMMMM!

WHAT YOU NEED:

  • 1 Scoop Chocolate Shakeology
  • 1 tsp coconut oil, melted
  • 1 tsp all natural Peanut Butter/PB2 (optional)
  • 2-3 TBS of water

WHAT YOU NEED TO DO:

  1. Melt the oil in the microwave for about 10-15 seconds
  2. Add the Shakeology (and PB)
  3. Add water 1 TBS at a time until you reach that “brownie batter” consistency!
  4. Try not to eat the bowl as you’re scraping every little bite off!!!
  5. If you’re patient enough, toss it in the freezer for about 15 minutes – OMG!

The shakeology would be your “red” and the coconut oil and PB if you’re using it would count towards a teaspoon. I actually just made half of one after dinner to satisfy that snacking urge (and because I only had 1/2 a red left!) and it was the perfect amount! My hubs indulged in a full scoop!
