We have officially kicked off week 3 off our 30 day Elimination plan and while YES it is at the beginning of a Holiday week here (hello Thanksgiving) and YES I will enjoy a few fall favorites – NO – I don’t feel like I’m “cheating” or “splurging” – I’m simply living a life in BALANCE and that feeling my friends is INCREDIBLE.

THAT is what this plan is about for me!

Soooo – how could eating pumpkin cookies and some southern dressing (that’s like stuffing to us northern peeps) on Thanksgiving day be IN LINE with my 30 day elimination plan?

Because this plan is made up of a set of rules – That I SET – based on things I have noticed and how they IMPACT ME!

This plan is not about deprivation or cutting carbs or eating high fat or following a trend…

Elimination plan 2 week results

This plan is about LISTENING to how my BODY reacts to different foods. In the last two weeks I have lost 3 pounds. But you know what – that doesn’t hold a THING to what I’ve gained.

  • -Strength to understand when I am eating for fuel vs. eating for boredom
  • -The sense to prioritize SLEEP and to give myself some GRACE #ImHumanToo
  • -The realization that I do not need sugar to enjoy life #15daysnoCookies #ThatsARecord #IfIWantOneIWillHaveOne
  • Turkey Chili and Taco Tuesday are just as good without the cheese or tortilla chips
  • The courage to try new things, journal how they go, and course correct as needed
  • Understanding sometimes you have to EAT MORE to get MORE RESULTS

We are traveling to visit family on Thanksgiving day and will enjoy some gatherings and I will no doubt be out of my routine.

But while there are things I cannot control – there are things I CAN control.
I’ve already prepackaged my vegan superfoods – combined with digestive health boost (c’mon my traveling friends, you know this is needed) and the power greens boost, because well not much of Thanksgiving dinner screams GREEN. But I want to make sure I am still getting my nutrition in…PROBLEM SOLVED.

I will choose the foods I LOVE and let the others be.
I may enjoy a sweet treat, if I’m feeling it.
Perhaps I’ll sip a glass of wine.
Time will tell

But I will tell you I will not feel like I am stuck on a DIET, I will choose and do what’s best for me and I couldn’t task for a better sense of satisfaction in my own skin.

I mentioned last week I was starting Intermittent Fasting and after 7 straight days of it I am happy to say I DIG THIS STYLE!

When I first heard of the idea of “fasting” for a portion of the day and not immediately eating post-workout I got a little nervous. I didn’t THINK it would be in the cards for me but honestly when I broke it down it ended up making my mornings EASIER.

Typical morning:

  • I would wake up,
  • Drink my energize,
  • Workout,
  • Get showered and ready,
  • And amongst getting the two minions up, fed, dressed, ready for school and out the door I would shovel something in or sip my shake during the crazy.

Now – I just get all that done and when I come HOME I make my shake and enjoy my breakfast.

Here are some of the fabulous meals I enjoyed last week!

Elimination plan meals
I’ve been generally fasting for 16 hours with an 8 hour eating “window”

Here’s an example of what my day looks like:

  • Sleep 10:30 – 5:30
  • 5:30 Wake up, down energize, workout @ 6
  • 9:30-10:30 Break – the – Fast
  • 12:30ish – Lunch
  • 2:30ish – Snack
  • 5:30 – 6:30 Dinner

There are two main things I’ve noticed:

  1. I am no longer sneaking a bite of the pancake or soggy cereal that the kids leave behind – nor their fruits and veggies that I would normally think of as “freebies” – #IamNotAGarbageCan #LessonLearned
  2. I am not mindlessly snacking late into the evening

Those two little things are going a LONG way!!!

Its the start that stops most people

Anyone else ever feel like summer time is like a double edged sword???

You want to “look your best” as you begin to shed the winter layers and pull out the shorts and tanks and dresses and swim suits and such — but at the same time the weddings and vacations and travels and picnics and birthday parties and graduations and cookouts make that a bit more difficult. 

Sometimes too “hard” that even STARTING something new during the summer just doesn’t seem WORTH it.

Some people will simply throw their hands up in the air and say forget it. 

Some people will take in excuse after excuse for reasons why they CAN’T make it work and vow to make it work “later.

Then other people will look at the challenges and MAKE a plan and make it WORK because deep down inside they KNOW it matters, its worth it, and the time will come!

But if there’s one thing I’ve learned over the years it’s to find balance in all the things you love and practice moderation-never-deprivation and to find COMFORT in myself and confidence to be the best mom I can be! 

I signed up for the 21-Day Fix Extreme TV test group to start on July 4th. I can’t say that I really WANTED to do it at the time – but I had a busy month ahead, full of a lot of fun in the sun, travels, family visiting, etc… and truth be told I was afraid if I didn’t sign up for it – I would totally let myself fall off track. I began the challenge on July 4th with the mindset to CONTROL THE CONTROLLABLE.

Throughout the 21-days of the challenge I enjoyed:

My daughter’s 5th birthday, 2 other birthday parties, one week of family visiting, a baseball game, family reunion, my best friend’s wedding (out of town I may add!), and typical Summer “STUFF”.

Was I perfect?

Oh heck no!

Did I enjoy the cake and cookies?

Oh heck yes!

BUT >>> I never missed my workout OR my shakeology in those 21 days.

This challenge was about enjoying myself without losing myself.

And I am happy to say – MISSION ACCOMPLISHED!

Egg Scramble

So who can relate:

Its Friday night, you want something quick and easy (and preferably healthy!!!) for dinner but you really don’t want to cave into ordering pizza….you have 5 minutes…options are???

-OR-

Its Saturday afternoon, you haven’t made it to the grocery store for the week yet but you have 5 minutes to throw lunch together – what do you turn to?

Enter—->Egg Scramble

This has become one of our go to meals! It is our meat less Friday dinner during lent, as well as veggie filled breakfast on the weekends and/or a quick, healthy, filling lunch! You can add as much or as little as you’d like and really you can’t go wrong!

WHAT DO YOU NEED:

(per person)

  • 2 eggs or 1 egg with 4 egg whites or 8 egg whites (1 red)
  • 1 cup chopped spinach (1 green)
  • 1/2 cup diced peppers, onions, asparagus (1/2 green)
  • 1/4 avocado (1 blue)
  • 2 tbs all natural fresh salsa (1/4 purple)
  • 1/4-1/2 cup shredded chicken or ground turkey (red – varies depending on the amount)
  • 1 slice toast (eziekiel is my favorite, my hubby opts for GF Udis but its also relish in a burrito! – 1 yellow)
  • slat and pepper to taste

WHAT YOU NEED TO DO:

  • Spray skillet with olive oil or nonstick spray and heat to medium/high
  • Sautee spinach, peppers, onions, asparagus and any other veggies you have on hand for 1-2 minutes.
  • Add egg

  • Cook for 3-4 minutes until cooked thoroughly

  • Serve alone or on top a slice of toast along with your favorite toppings!

There are so many options with this meal. Like I said above – its perfect for Meat-free Fridays and you can make as much or as little as you need! We often call it our “kitchen sink” meal where whatever we have left in the fridge at the end of the week gets tossed in the pan and mixed up! And if you happen to have any leftovers…they do reheat up well!

Quinoa Turkey Meatloaf

Turkey Meatloaf – 21 Day Fix Extreme Style, aka, Gluten Free!

This turkey meatloaf recipe was a hit in my house!!! We have been primarily gluten free for the past 6 months now and while neither my husband or I have a “gluten allergy” we both tend to just feel better when we avoid it! Luckily our clean eating lifestyle has made the adjustment pretty easy and why I absolutely loved this Turkey Meatloaf recipe that uses Quinoa opposed to the traditional breadcrumbs! Its simple, clean, and if you’re like me…you can easily double this up and make an extra one to freeze or enjoy throughout the week as a second dinner and/or lunches!

Turkey Meatloaf

Makes 8 servings, 1/8 meatloaf each 

21 Day Fix & Fix Extreme Container equivalents: 1/2 Purple, 1 red, 1/2 yellow

WHAT YOU NEED:

  • 2 lbs raw 93% lean ground turkey
  • 1 cup all natural-mild salsa
  • 1 cup cooked quinoa, cooled
  • 2 large eggs, lighly beaten
  • 3 cloves garlic, finely chopped
  • 1 tsp sea salt or Himalayan salt (Mineralize)
  • Ground black pepper (to taste, optional)
  • Fresh chopped parsley (for garnish, optional)

WHAT YOU NEED TO DO:

1. Preheat oven to 375 degrees F (190 C)

2. Combine turkey, salsa, quinoa, eggs, garlic, salt, and pepper in a large bowl; mix well by hand or with rubber spatula (I used that little gadget from Pampered Chef and it worked FABULOUS – I am not a mix by hand type of girl and this did the trick!!!)

3. Shape mixture into shape of a loaf and place on engrossed 13×9 inch baking pan (I actually used a pan that has the grates so the grease will drip down off)

4. Bake for 60 to 70 minutes, or until center is no longer pink and meat is cooked through.

5.  Let stand 10 minutes before serving

6. Garnish with parsley

TIP: Cut cooked meatloaf into single servings and freeze in single resealable plastic bags for future meals! 

I really liked the consistency of the meatloaf but next time I will likely add in some chopped peppers and spinach just because I like to sneak in those greens any chance I get!

Well I wish I could say that I nailed week 2…but truth be told it was not my greatest…I let me excuses get the best of me and I didn’t like it, not one single bit! It was “that time” of the month, I was tired, I was short on time, I was just going to have “one bite” which we all know always leads to more…and so on and so on!!!

Even though I missed my first workout in almost 1 YEAR on Sunday…the rest of my workouts were pretty on point!!! I can tell that my 8s are getting “light” and its time to up to 10s. I can feel different muscle groups being sore so I know I am working my body right…

It wasn’t so much what I didn’t do but rather what I did do…

An unplanned trip to the grocery store Tuesday morning had me grabbing a bag of cinnamon roasted almonds, and it was a BIG bag! I knew I was in trouble as soon as I opened it but one handful led to another and I consumed the entire pound in less than 3 days…which equates to 48 blues…FORTY EIGHT BLUES – that’s 7 weeks worth of blues in just 3 DAYS!!! Ugh I get disgusted just thinking about it.

But just like I tell my challengers all the time-you can’t change the past! Its time to focus on the the week ahead!!!

My week 3 is off to a great start and I’m looking to add in some cod this week (last week’s planned cod was replaced with tilapia – I was nervous to try something new!!!) and the very popular chicken fajitas. I’ve been chugging water like crazy and its definitely helping me steer clear of the mindless snacking along with lots of sugar free gum!!!!

I’ve laid it all out and joined in with Autumn Calabrese, our CEO of Beachbody, Carl Daikeler and 2000+ additional Beachbody coaches to kick up my own accountability and NAIL the week!

21 Day Fix Extreme one week down 2 to go!

I’m excited to say that I survived week 1 of the 21 Day Fix Extreme! Although I’ve been sore somewhere new every single morning, I find the workouts fun yet challenging and I can already see some changes in my body! I loved all of the workouts in the original 21 day fix and this program proves the same. The variety is perfect! Every day targets a different muscle group and that Sunday Yoga fix comes at a time when your muscles REALLY need that extra stretch. Kind of like they knew what they were doing, lol 🙂

I had never used a resistance band the way its used in Pilates but WOW – talk about resistance training at its best!!! I thought you just used it as a subsitute for weights but turns out some basic moves can be turned up a notch or two or three with this simple little band!!!

I still kind of feel like a twisted pretzel at times but I’m getting better for sure!!!

Now truthful moment – my nutrition has not been where I’d like it to be! The planning part is there…and prep is there…its controlling my urges to eat when I know its not “time” to eat! I keep reminding my challengers and myself – Don’t mistake that feeling of thirst for hunger – if it hasn’t been 2.5-3 hours since the last meal – CHUG!!!!

I’ve been dabbling in a lot of the new recipes within the 21 Day Fix Extreme nutrition book – and those are nothing short of AMAZING – I’ve tried out the Cashew ‘N’ Oat Hotcakes, the Turkey Chili, Strawberry Protein Bars, Chocolate Pudding and repeated each of them!!!

I never miss my SHAKEOLOGY and even found myself subbing some of my “reds” last week and doubling up on my shakeo!!! Perhaps it was the new addition of the Candy Bar to my rotation (modified to fit into my daily container allowance!) but there have been people sick all around and I know that will only help boost my immue system with all the antioxidants along with the pro and pre-biotics! This mama doesn’t have any time for getting sick!!!

I know a lot of people/men see Autumn and wonder if this program can be for men too. Well let me tell you my hubs has been working out regularly for almost a year and while he is in the middle of Insanity Max: 30, he passed on the PULSE day and joined me for a little Dirty 30 on Valentines Day morning and he even admitted he got a good 30 minute burn in!!!

We’ll be doing round 2 together 🙂

Its been FRIGID in western PA this weekend and as much as I dislike these subzero temperatures I can tell you I was pretty darn productive!!! Today I’ve already prepped the Turkey Meatballs and Veggie Egg Cups for this week…along with some cajun chicken, tilapia, mancakes for the hubby, and veggies!!! I’ve set myself up for success….I just need to resist the random snacking and desire to finish off my munchkins’ snacks!!!

2015-02-10 06.51.32My week 1 goal was primarily to STOP finishing remaining food and the mindless snacks – and I failed. Why is it that that macoroni and cheese just screams out my name to take just ONE bite?!?! My willpower was just bad this week!!!

So this week I’ll try again…no more finishing the oatmeal or cereal or those darn cheese its – its time to FOCUS and stick to my meal plan!!!

 

21 DFX Week 2 Meal Plan

I’ve planned out week 2 really focusing on the foods at the top of the lists to maximize my results!!! My YELLOWS are primarily quinoa, sweet potatoes and oatmeal…my REDS are usually fish/seafoood, chicken, turkey, eggs, and Shakeology, my PURPLES are apples and berries and my GREENS are asparagus, broccoli, peppers, spinach and cucumbers. I’ve also eliminated bananas, greek yogurt and almond milk.

I took the time, planned, shopped and prepped and now I’m looking to my challengers and accountability group to help hold me to my goals this week!!!!

21 DFX testing the waters
I cannot wait to get started! I decided to start this program on Monday with my new challengers but I also couldn’t wait 5 WHOLE DAYS before testing this out! Since I had been following the original 21-Day Fix schedule so I swapped in the Pilates Fix Extreme to test the waters…and OMG – SORE BOOTY is about all I can say!

I know I am going to be feeling every bit of this tomorrow!!! That little resistance band was used in almost all the moves and I have a feeling I’ll be feeling this workout in every step I take!
As excited as I am for the new workouts… I am just as excited for the NEW RECIPES!!!! I have already flipped through the book and jotted down a few I can’t wait to try out like the cashew pancakes, and the veggie egg muffins and the turkey chili but I couldn’t wait to make these little treats!

Strawberry Protein squares

WHAT YOU NEED:
2 cups old-fashioned oats
4 scoops Strawberry Shakeology
1/2 cup all natural smooth almond butter
3/4 cup unsweetened almond milk
WHAT YOU NEED TO DO:

1. Place oats and Shakeology in blender or food processor; cover. Blend for one minute.
2. Add almond butter and almond milk; cover. Blend for 1 minute or until it forms a wet dough.
3. Place in 8×8-inch baking dish; press evenly to cover bottom of dish. Set aside
4. Refrigerate for 2 hours or until firm. Cut into eight 1-inch squares.
The best thing about Shakeology – it feels like its a cheat meal  – but its not!
