1 scoop Snickerdoodle Shakeology ½ tsp. baking powder ¼ cup / 60 ml unsweetened almond milk (or water) 1 large egg Nonstick cooking spray 1 tsp. pure maple syrup

I get so many questions about how I got started on my fitness journey! I wanted to share it here so you can have it to read and save it for later when you need motivation.
In February 2014 I found myself asking for prayers as we were rushed to Children’s Hospital holding tightly to VERY sick little boy.
My infant’s deteriorating health was dismissed as “a bad cold” before we got in to see HIS doctor who quickly sent us by ambulance to Children’s to get the best care.
We received his diagnosis: Pneomonia, double ear infection, bronchiolitis, and very high fevers.
We spent two tiring nights there and while my little man attempted to get comfortable and rest I simply watched him.
Sleep just wasn’t happening for me and eventually when he settled I grabbed the phone for a mindless midnight scroll.
And there it was…

Something HIT ME. I saw the importance of GOOD HEALTH.
Colton, my son was 8.5 months old & I was still holding on to a few post baby pounds but more than anything I was EXHAUSTED 24/7 and at that moment I decided to stop wishing and start working.
It was JUST a virtual fitness group with a bunch of strangers at the time but what I learned in that group became a pivotal point in my life!!
HOW IT ALL BEGAN
So I went all in!
9 years ago I stood in my bedroom and handed my hubs my iPhone 4 to fulfill my coach’s request to submit my “goodbye” pics to gain access into her 21 day virtual BOOTCAMP….
That was me gearing up for my first online accountability group…and this is me NOW…
Ok to be honest this picture on the left was me on the second attempt.
The first set of pics I deleted…but my coach INSISTED I submit them, so I retook them the night before we started…
I had no idea what to expect.
Heck the term “challenge” group intimidated me enough as it was…
Those seemingly small containers scared me…
I thought weights would make me bulky…
And I had no desire to open up to a group filled with a bunch of “strangers”…
And I most definitely was not interested in posting anything on social or publicly for anyone to see 🤦♀️🤦♀️
All I knew at that time was that I was tired of being tired.
I didn’t feel comfortable in my own skin and I was DETERMINED to set the example I wanted my growing kids to follow!
Gosh I was NOT going to quit on myself, not this time.
My babies needed their mama at her best, and I needed to make some C H A N G E S
I was R E A D Y to make the sacrifices.
I had NO IDEA then where I would wind up today…
But I do know that the very first step I took towards joining that group was the one door that opened up all the other possibilities!
During those first few days I was a fly on the wall in the group! I didn’t post anything, I didn’t ask anything and I quietly just tried to figure it all out. It was a change and it was hard. But on the 10th day, Fat Tuesday, I went off the walls. We had lunch at a Pizza Hut buffet and I ate all the things. All the pizza, all the breadsticks and all the dessert and I felt AWFUL. LITERALLY – not because I felt like I was cheating but my digestion was awful, I was bloated, and so uncomfortable and I thought to myself “why am I beating myself up with these workouts and investing this time and money into new habits if I’m going to undo the hard work”
And that’s the day it all shifted.
On the 11th day I posted to the group for the first time. I shared my failure and I shared what I was going to do the next day to make myself FEEL my best. I didn’t know anyone in the group but somehow that public proclamation was all I needed to stay on track, eat the food that fueled me, and continue through the program.
By the end of that 21 days I didn’t have to be asked for my Day 21 pictures. I was proudly setting up that iphone timer and sending them back over to my coach with pride.
Not because I was perfect the remaining 10 days but because I was showing up as my best self and gosh it FELT really amazing.
I finally felt like ME again for the first time – post entering motherhood – and I LIKED IT!
I got my confidence back.
My husband got his wife back
My kids got the energetic mama they deserved
And I knew this was something other women NEEDED and so I did the only thing that made sense…I BEGAN TO SHARE as I kicked off my own business as a BODi partner!

I started making mancake bakes when I FIRST started my health and wellness journey back in 2014 but it wasn’t until I did a gut health reset in March of 2022 that I brought them back in the regular meal plan rotation and they haven’t left since.
They’re a perfect combination of carbohydrates, protein, fruit, veggies and DELICIOUSNESS!
5 months of new varieties, repeating the favorites and trying new things!
I can honestly tell you I do not get tired of this breakfast and I hope you find it just as satisfying!
This is the recipe for my most recent bake: PEACHES, STRAWBERRIES & ZUCCHINI MANCAKE BAKE
but at the end of this post I’ll share some switch ups.
WHAT YOU NEED:
2 cups egg whites
2 cups old fashioned oats (could use quick oats or any oats but I prefer the Sprouted Rolled Oats by One Degree organic foods)
2 bananas
1 large zucchini, sliced into chunks
2-2.5 tsp cinnamon
2 tsp vanilla
1.5 cups peaches, diced
1/2 cup strawberries, sliced
9×13 pan lined with unbleached parchment paper
optional: nut butter, granola
WHAT YOU NEED TO DO:
Preheat oven to 350
Blend egg whites, oats, bananas, zucchini, cinnamon and vanilla
Pour into lined 9×13 pan
Add peaches evenly throughout the pan
Add sliced strawberries evenly throughout the pan
Bake 45-50 minutes until cooked thoroughly and sides begin to pull away from sides
Slice into 4 equal servings and store in fridge in an airtight container
Serve warm and top with nut butter and/or granola or serve cold and enjoy on the go! For my portion fix friends: 1 red, 1/2 green, 1 purple, 1 yellow
Its been 5 days of MAKING THE SHIFT with the new program SHIFT SHOP and I gotta say-feeling like a brand new baby challenger again just starting out has me feeling all the feels!!!
When I committed to the 21-day fix over 3 years ago i was 100% COMMITTED – following my meal plans, measuring my foods, avoiding the temptations and just staying focused. Once I met my “goal weight” I got more lenient.
Arguably – Rightfully so…but then I got comfortable. And 2 pounds here and 3 there started to add up.
And while my focus is not on the scale and more so on how I FEEL it was rippling into other areas and I am PROUD to say I AM BACK IN MY GROOVE!!!
One thing I used to have DAILY was a salad for lunch. I’m not talking plain chicken and lettuce. A loaded, filling, FUN and different salad to help me get in the greens and really fuel up on good foods and with salads a part of the daily lunch plan in week 1 of SHIFT SHOP – I fell back into where I started.
WHAT YOU NEED:
1 cup romaine/spinach
1/2 cup carrots
6oz grilled chicken (rotisserie also works well!)
1/2 cup steamed edamame
2 tbs almond slivers
Dressing of choice
(If you’re following the Shift Shop meal plan or Portion Fix nutrition system this would be: 1.5 greens, 1 red, 1 yellow, 1/2 blue, 1 orange)
Optional:
Strawberries
Tomatoes
Red peppers
Avocado
WHAT TO DO:
Combine the lettuce/spinach, carrots and chicken in a large bowl and chop (I find using the Pampered Chef Salad Choppers makes it a BREEZE!!!)
Add any additional toppings and dressing. Continue to chop
Top with almonds and edamame and ENJOY!!!

NOTE: I prepared this using leftover unstuffed pepper soup. You could always make fresh! I wanted to include as many veggies as possible while still enjoying this delicious family favorite! It was a total win in our book and a great way to watch the kickoff on a beautiful Fall Sunday afternoon!
For my Portion Fix fans: I counted as one YELLOW, one RED, one BLUE and 1/2 a GREEN. I popped a few pieces of broccoli to round out a full green serving!
