November – New Month – New Goals

I hope you had a great Halloween weekend filled will a few treats and not too many tricks!!! I’ll admit – we had a great weekend but now  its time to rid the house of all this JUNK and get my game face on.
My family is kicking off our 3rd annual SWITCH WITCH game – have you ever heard of it?
This is basically a way to help you – and your kiddos – toss the stash of Halloween candy built up from the trick or treating weekend! You can donate your candy or take it to work with you  but the point is…you get it out of the house! 
We have been talking about this with our kiddos for a few days an we will let them pick out a few favorites then the bowl goes on the fireplace before bedtime and a gift arrives in the morning. Its fun and while the event of going trick or treating was a blast for us all – they don’t need the candy and neither do I!!! 
I don’t know about you – but candy just isn’t the same as it used to be! I will be the first to say I enjoyed a Reese Cup or two and a mini twix and oh my that take 5 bar was da’bomb! But as soon as I finish always find myself in that sugar high then CRASH!
Can you relate?
You get the rush but then you’re left with bloat and that sluggish feeling!

Crockpot & Clean Pot Roast


—> How many of you are used to dumping a can of condensed cream of whatever soup onto a roast in the slow cooker?
—> Or maybe you do the can of coke so it is super tender and juicy?!
Don’t get me wrong – those taste great…amazing in fact…but they’re SO BAD FOR YOU! STOP!

Cooking a delicious, melt in your mouth roast is more about the cut of meat you choose rather than the stuff you put on top!
I only eat red meat in moderation…but if I’m going to do it, I”m going to make sure its worth it!
I recommend choosing fresh cut (I prefer a sirloin tip roast) and add flavor the NATURAL way! Yes I’m talking about some fresh cracked black pepper, a few gloves of garlic, a sliced onion, some himalayan sea salt and about 1/4 cup of water to make it STEAM!
You can add in whatever veggies your family likes – such as carrots, mushrooms and even some little red potatoes for a complete meal in one crockPOT. Easy prep, easy clean up and virtually NO effort on your part!!!
Cook it on LOW for about 8/9 hours and wahlaa! A delicious roast – without all the added “stuff” and just as delicious as grandma used to cook on Sundays!
Trust me – just try it for yourself to see!

What Kind of Bars can you have on the 21-day fix?

I never used to be a procrastinator but I swear the older I get the more squirrelly I become!

During my race against the clock to pack for a 5-day trip to Texas for my family of four within a 2 hour a time frame I managed to do about 34,539 things that didTravel snacks - bars on the 21 day fixn’t NEED done but I decided to do anyway all the while forgetting my apple and peppers in the fridge with the munchkins yogurts 😡

Luckily I keep these little gems in the diaper bag! I def don’t encourage “bars” on a daily basis but if you’re going to grab and go these are the THREE that I recommend…all ordered from Amazon Prime and delivered right to my door🙌

1. That’s IT Bar: These are my new found “can’t leave home without it” snack! I stumbled across these on my way home from SUMMIT in Nashville while waiting for my Green Tea at Starbucks. The name caught my eye and when I flipped it over I saw that the ingredients were simply fruit – THAT’S IT!

I snagged a few from Starbucks before I realized I could order through AMAZON and get them right to my door! The Apple and Strawberry is definitely my favorite (reminds me of a fruit roll up!!!) and the Apple and pear is a close second!
For my 21 Day Fix Friends – I count these as one purple – racking up 100 calories, 4 grams of dietary fiber and about 17 grams of natural sugars. 
2. KIND BARS: I caught a Q&A from Autumn on this topic and ever since I have kept this stashed in my diaper bag! Kind bars are primarily nuts. Don’t get me wrong there are some wild and crazy varieties out there with a lot more in them but if you watch the labels you can get a pretty natural nut bar in the KIND variety! I also order these from Amazon or grab them when I head to SAMs on a stock up trip!
For my 21-Day Fix Friends – I count these as 1 BLUE and 1 tsp – coming in around 200 calories and 17g of (healthy) fats. 
3. Quest Bars: I’d say these are the least “clean” of the 3 but also my favorite as I find them the most filing.
For my 21-Day Fix Friends – I count these as 1 red and 1 yellow…although I def. don’t recommend these when “strictly” following the fix as they do not have the equivalent nutritional value as a lean meat (red) or healthy grain (yellows) – would. They range 160-200 calories with about 8-12 g of fat yet virtually ZERO sugar! 
Caramel Vanilla shakeoOf course I ALWAYS keep a Shakeo packet always within reach….this is the most clean and natural way to squeeze in a snack on the run – especially when those unexpected hunger growls start! I prefer to make it blended but I’ll be honest…give me a shaker cup and some water and I’m good to go! Cures my cravings, fills my tummy and fuels my body for the day ahead!

FIXATE – Italian Meatballs

Because sometimes you just need a little Italian love but you still want to keep it clean!

I love meatballs – plain, with sauce, cold, it doesn’t matter! And these little Italian goodies were a hit – especially for my growing little guy!

And like most things I do…I actually doubled the recipe below and froze half for future quick dinners…this mama needs fast weeknight meals! Who can relate?!

WHAT YOU NEED:

  • 1/3 cup whole wheat bread crumbs*
  • 1/4 cup 2% milk or almond milk
  • 2 tsp. olive oil
  • 1 medium onion finely chopped
  • 3 cloves garlic finely chopped
  • 2 lbs raw ground 93% lean ground turkey breast
  • 2 large eggs
  • 1/4 cup finely chopped fresh parsley
  • 2 Tbsp. grated Parmesan cheese
  • 1 tsp. dried oregano leaves
  • 1/2 tsp. sea salt/Himalayan salt
  • 1/2 tsp ground black peppers

WHAT YOU NEED TO DO:

  1. Preheat oven to 425 degrees F
  2. Line large baking sheet with parchment paper, lightly coated with spray
  3. Place bread crumbs and milk in a small bowl, set aside, soak for 10 minutes
  4. Heat oil in medium skillet over medium-low heat
  5. Add onion; cook, stirring frequently for 5 to 6 minutes, or until onion is translucent
  6. Add garlic; cook, stirring frequently for 1 minute
  7. Combine onion mixture, turkey, eggs, parsley, cheese, oregano, salt, pepper, and bread crumb mixture in a large bowl; mix well with clean hands or wooden spoon. Refrigerate covered for 1 hour
  8. With clean hands form turkey mixture into approximately 42 1″-inch meatballs; arrange onto prepared baking sheet.
  9. Bake 13-18 minutes or until browned and cooked through.

Serves: 10 – Prep time: 30 minutes – Cook time 15 minutes

Container equivalents (per serving):

  • 1 Red 1/2 Blue
  • Served over 1/2 cup whole wheat or quinoa pasta – add 1 Yellow
  • Served over 1 cup Zoodles: Add 1 Green
  • Served with 2 large romaine lettuce leaves: Add 1 Green

*For the breadcrumbs – I simply made my own gluten free bread crumbs by toasting some gluten free bread slowly in the oven and crumbling!

Sweating for the Wedding Success

Nothing – NOTHING can beat that message you get when someone reaches out to you sharing their weightless successes knowing that YOU had a huge play in that! That FEELING…that FEELING of knowing that you helped change their lives is priceless…and that’s exactly what I got when Kelly shared her 34 pound weightless with me!!!

Kelly and I had connected through social media leading up to her wedding. She got started but hadn’t yet committed but when that dress fitting came around she realized it was crunch time!!!

Needless to say, she was fueled by her quickly approaching wedding date and bound and determined to look and feel her best on her big day!

Do you ever get to the point of doing something repeatedly to where you barely have to put forth the effort to take action?

Two weeks ago – before beginning the PIYO program – I felt like that.

Don’t get me wrong, I absolutely LOVE the 21-day fix. The workouts are spot on and the nutrition guide cannot be beat but – after doing it for so long – I needed a change and I am so thankful I went with PIYO! Its low impact yet still intense…so I am a nice sweaty mess at the end which always help support that I am getting in a good workout!

In just these first two weeks I am noticing a significant improvement in my strength, flexibility and there’s a wee bit of ab definition starting to pop through – which is pretty darn exciting!

I have been following the “strength” workout calendar and am 1/4 of the way through the 8 week program.

I enjoy all the focus the core and the fact that I don’t need any equipment – just ME!

My tricep pushups are now done with ease.

I can hold my poses with more stability and focus.

And my daughter even likes to pop in here and there for some fun!

I have decided to stick with the 21-day fix meal plan throughout the program for a few reasons: 1) Its what I know. Its how I look at food and its how I think about nutrition. 2) It works for me! And honestly it will work for just about anyone but I know what foods maximize my mentality, my functionality and my energy levels and I like the way I feel on this program! 3) Its easy for me…I have been eating clean, balanced portions for over a 18 months now. This is how I see nutrition plus the containers are pretty cute too 🙂

4) It allows me to schedule in some treats and cheats here and there and that BALANCE is key in my success for maintaining a healthy and balanced lifestyle! I sure do love my cookies!!!

People are always asking about meal planning and trust me, I get it, it is intimidating but I promise once you get into the swing of things its just a party of your week!!!

Clearly – I repeat a lot of the same meals! It makes my shopping, prep and day to day decisions easier – so why complicate things?!?! I like to prep in advance and use my crockpot AT LEAST once a week (hello salsa chicken!!!)

Plus I’ll admit – all my challengers really help keep me on my toes and committed to my daily healthy lifestyle so I can lead by example for all of them! Its a combo effort no doubt!!!

Candy Bar CRUNCH

Because sometimes you just need a little CRUNCH!

Getting in my daily dose of dense superfood nutrition with my daily vitamin mixed with some probitoics and digestive enzypmes…oh and some Peanut Butter Granola
While I don’t get so fancy with the mix ins on a daily basis Aubrey’s oreos from her treat bag were calling my name and this hit the spot for sure!
 My little guy couldn’t get enough and the consistency was perfect!!!
WHAT YOU NEED: 
 
6oz unsweetned almond milk
4oz water
1 Scoop Chocolate Shakeology
1 Cup spinach
1 TBS PB2
1 TBS Vanilla Fat Free Sugar Free pudding mix (I know I know, so not clean, but that’s okay!!!)
1 tsp caramel extract
12-15 ice cubs
1/4 cup of the KIND Peanut Butter Whole Gran Clusters granola
WHAT YOU NEED TO DO:
 
Blend all the ingredients (excluding the granola) until smooth. You may have to stop and shake up a bit if it gets too thick but it will eventually blend! Pour into a bowl, top with granola, and indulge in what tastes like a monstorous DQ Blizzard when in reality you just had what is likely the healthiest meal of your day!

I wanted to be a healthy & fit mom. I wanted to be able to give my children things I didn’t have. I wanted to be able to pay the bills without strategically staggering out pay dates to make sure we didn’t go negative in our account. I wanted to create a future for my family that would allow us to travel, to have fun, and to simply LIVE out our life – together.

18 months later…

✔️I have paid off my student loans

✔️I have been able to put money aside for our children’s college funds

✔️We have been able to build our dream HOME with the supplemental income I have added to our family’s monthly budget!!!

✔️We are able to GIVE more to causes that truly mean something to us

✔️And above all else – I have such an amazing sense of self-satisfaction knowing I am able to help other women build and live out their dreams too!

I feel like a lot of people just don’t really GET what being a Beachbody coach is and how much it can truly impact your life – your future and your family but I want to help you understand!!! I train my team – I guide them – I help them succeed! I will run with you or walk beside you but know I am there for you if you are ready to take that leap!!!

I’m not saying that being a work from home stay at home mom is the best way to live out your dreams but I will say it is the best thing for me and my family and the blessings that I have experienced in just these last 18 months is truly far beyond my wildest dreams and I am looking for those of you who want this too!!!
