No Bake Cookie Breakfast bites

Gluten Free – Dairy Free – and DELICIOUS

WHAT YOU NEED:

  • 3/4 cup peanut butter
  • 1/4 cup honey
  • 1 tsp pure vanilla extract
  • 3 TBS chia seeds
  • 3 TBS unsweetened coconut flakes
  • 3 TBS almond slivers
  • 3 TBS craisins (or raisins or other dried fruit)
  • 1/2 cup Vanilla Vegan Shakeology
  • 1/2 cup oats

WHAT YOU NEED TO DO: 

  1. Combine the peanut butter and honey, melt in microwave 20-30 seconds. Stir thoroughly.
  2. Stir in remaining ingredients
  3. Scoop/Roll 1″ round balls and chill in the refrigerator for at least one hour.

Makes approximately 24 balls

For my Portion Fix Friends – 1 ball = 1/2 yellow (roughly estimated!)

 

 

 

Cake Batter Crunch

So what do you do when you used to use Brownie Batter to combat those late night cravings and you’re now drinking vegan vanilla?

Why swap it out with some CAKE BATTER CRUCNH!

And yes – it is as good as is sounds:

What you need:

  1. Vanilla Shakeology* (I prefer the VEGAN but regular could work as well!)
  2. 1/3 cup greek yogurt – optional*
  3. 1-2 tsp Nut Butter of choice or PB2
  4. Splash of coconut water
  5. Shredded coconut/Crushed almonds/pecans/cashews – optional

*I have made this with both one full scoop of shakeology and omitting the yogurt and I’ve done half a scoop of Shakeology with 1/2 a red of Greek Yogurt – the choice is yours! But either combo would leave this one RED serving per the Portion Fix Nutrition, 1-2 spoons for the nut butter, Blue container if you use nuts and/or orange if you use coconut flakes! 

What you need to do:

  1. Add yogurt to a bowl
  2. Stir in nut butter & mix well
  3. Add Shakeology & mix well
  4. Add in Coconut water 1 TBS at a time utnil you reach your desired consistency
  5. Top with shredded coconut or mixed nuts
  6. ENJOY!

That little something something to satisfy a sweet tooth craving?

Or maybe you’re favorite past time is licking the cookie dough bowl (even when mom says no) and sneaking in that last little bite of dough???

I am one who honestly prefers the chocolate chip cookie DOUGH over the cookie and also one who is now avoiding gluten (because I bloat like a mad woman) and dairy (because my skin breaks out like a teenage girl) and I am ELATED to find a healthier sweet alternative that fits my dietary preferences and well, tastes AMAZING.

MEET:

Cookie Dough Energy Balls

Total Time: 15 min.
Prep Time: 15 min.
Cooking Time: None
Yield: 13 servings, 1 ball each

WHAT YOU NEED: 
½ cup all-natural almond butter
¼ cup raw honey
½ cup finely chopped raw almonds (I used slivers and they worked great!)
2½ scoops Vegan Vanilla Shakeology (you could use the regular but the taste of the vegan is wayyyyyy better!)
2 Tbsp. mini semi-sweet (or dark chocolate) chocolate chips (I use the ENJOY LIFE brand – found at Target #yourewelcomemoms) 

WHAT YOU NEED TO DO:
1. Combine all ingredients in a medium bowl. More specifically: I found it easiest to mix the dry almonds and Shakeology, then I added the almond butter, mixed well, then added the honey, mixed well again, and stirred in the chocolate chips. 
2. Roll into thirteen balls, about 1-inch in diameter each. (I used the pampered chef small scoop and it actually got 20 balls – so I adjusted the serving size to be 1.5 balls to match the nutritional breakdown below)

Chocolate covered Strawberry Shakeology

I mean…who doesn’t want chocolate covered strawberries for breakfast?!?!

The one thing I’m missing/was missing from, what had become, my daily breakfast a few months ago was my LOVE CRUCH Peanut Butter & Chocolate granola on top of my shakeo bowl each morning!! It gave the perfect little crunch and truly felt like such an indulgence!!

However it doesn’t EXACTLY fit into my Shift Shop test group meal plan so I decided to improvise and this chopped topping was just what I needed!

Chocolate covered strawberry shakeo

WHAT YOU NEED:

1/2 cup coconut water
6oz water
1 scoop vegan chocolate shakeo
1 cup spinach
1 cup chopped berries, divided (1/2 blended and 1/2 on top)
1/2 tsp cinnamon
Ice

 

WHAT YOU NEED TO DO: Blend, top with remaining strawberries & ENJOY!

Macaroon Shakeology

In a season where there are cookies and cookies and more cookies around at the parties and gatherings and dinners and such…I am making it a point to find more and more ways to take those favorite cookie treats and adjust my daily dose of superfoods to resemble the tiny treats we love so much – without – falling off track with my nutrition goals!

Enter my latest combination: The Macaroon!

I made this with chocolate initially but later with vanilla shakeology and its delicious both ways!

Def. curbs any cravings you were fighting and BONUS – serves as a complete meal and simply tastes delicious!

WHAT YOU NEED:

Chocolate (or vanilla) shakeology
1 tsp coconut oil
1 tsp pure vanilla extract
10oz coconut water
1 cup of spinach

WHAT YOU NEED TO DO:

Blend and top with 1 TBS of UNSWEETENED shredded coconut flakes and wahlaaa – AMAZINGNESS!!!

Candy Cane Shakeology

Tis the season my friends!!!

Its been a while since I’ve shared a new Shakeology recipe but that’s mainly because I am a creature of HABIT and well, I like my daily chocolate shakeo with spinach, almond butter and coconut water…BUT…in the spirit of my 12 DAYS OF SHAKEOLOGY group launching next week…I decided to get a little festive and let’s just say: MISSION ACCOMPLISHED!

WHAT YOU NEED:

  • 1 Scoop chocolate Shakeology (vegan or regular)
  • 1 cup almond milk/coconut water
  • 2 tsp crushed candy canes

WHAT YOU NEED TO DO:

Blend and ENJOY!

NOTE: The more ice you add, the thicker it becomes! I like to add LOTS so I can eat it like a bowl of ice cream!!! I combine everything in my blender with about 10-12 ice cubes. Basically JUST ENOUGH that allows my blender to blend it without getting stuck.

I switch the dial to “frozen desserts” – turn it on and let it do its magic!!!

(My old blender didn’t have this feature so I just did the “crush ice” feature for about 10 seconds then I would blend on high until it sounded like all the ice was gone). 

Sometimes I have to take it and shake it a bit but that’s how I get the ice cream consistency!

Vegan Chocolate PB Cheesecake Shakeo -Its all about the Consistency

I get the question almost DAILY about my shakeology – why its so thick – how I mix it – how its blended and why it always looks so darn GOOD…here’s the details:

I start by gathering:

  • 1 Scoop Vegan Chocolate Shakeo
  • 1/2 Cup water
  • 1/2 Cup Unsweetened Almond Milk
  • 1 Cup Spinach
  • 1 tsp Caramel Extract (Or Vanilla extract, Coconut Extract, etc…)
  • 1 TBS PB2
  • Dash of cinnamon
  • And here’s the kicker…
    • 1 tsp Fat Free Sugar Free Cheesecake Pudding mix (I know its not clean!!! But that small teaspoon goes a long way. Just trust me on this one)

I combine everything in my blender with about 10-12 ice cubes. Basically JUST ENOUGH that allows my blender to blend it without getting stuck.
