I found myself staring at a pound of ground turkey that needed to be cooked, an uncooked spaghetti squash on my count along with a desire for SOMETHING NEW for dinner.
I did a quick run through the pantry to see what I could pull together and I have to say, this creation was QUITE TASTY!
2 Tbsp Taco Seasoning (I prefer the WILDTREE brand but you can always make your own)
1 cup black beans
1 cup favorite salsa
For topping:
Jalopenos
Grape tomatoes
Cheese (I didn’t use any and it was delicious but if you like it and it fits your nutrition plan go for it!!!)
WHAT YOU NEED TO DO:
Preheat oven to 350.
Spray a 9 X 7 oven safe dish with cooking spray or line with foil.
Poke many holes all around the spaghetti squash and cook in microwave for 7-9 minutes, checking to make sure cooked, but not over cooked. You should be able to easily pierce with a fork.
While squash is cooking, begin to brown ground turkey with garlic
When squash is finished, slice in half, and remove insides and “shred” with a fork as you pull out the “spaghetti like” insides.
Place approximately half of the squash in the bottom of the pan
Drain the meat, season with taco seasoning, 1/2 cup water, and simmer for 5 minutes.
Layer about half of the meat, followed by 1/2 cup black beans and 1/2 cup salsa.
Repeat – squash, ground turkey, beans, salsa
Add your favorite toppings (jalopenos, tomatoes, cheese if desired
And bake for 20-25 minutes.
AND ENJOY!
NOTE: I prepped this earlier in the day, covered with foil, refrigerated and then baked it when ready to eat.
The leftovers are great and you can adapt this to many dietary preferences including paleo, gluten free and dairy free! I’ll most definitely be including this in my upcoming 80 Day Obsession meal plans!

4 cups spaghetti squash – 4 greens
1 lb lean ground turkey – 4 reds
1 cup black beans – 2 yellows
1 cup favorite salsa – 1 purple so roughly a 1/4 purple per serving.
So this would give you 4 servings of 1 red, 1 green, 1/2 yellow and 1/4 purple

I read the ingredients, put in a grocery order, and then at 4:00 the next day sat down to make it.
One problem: I missed the fact that it was a “slow cooker” recipe AND I had about 2 hours before it was dinner time.
I allowed that recipe to inspire me and I made a few twists and alterations.
At the end I realized that this would have been a great way to test out my new InstaPot but I guess we’ll save that for round 2.
WHAT YOU NEED:
1 package andouille sausage
1 pound uncooked shrimp (peeled and de-veined)
1 cup shredded chicken (or large boneless skinless chicken breasts, pounded)
3 red peppers diced
1 white diced
2-3 jalapeños (see note), seeds and stems removed (I used can and they worked great!)
3 cups riced cauliflower (frozen works fine!)
1 cup low sodium chicken broth
1 30-ounce can crushed tomatoes
3 gloves minced garlic
3 tablespoons store-bought or homemade cajun seasoning
½ teaspoon each salt and pepper, or to taste
cilantro or parsley, for topping (optional)
NOTE: If you want to use brown rice instead of the riced cauliflower add one more cup of chicken broth and follow the recipe at Creme de la Crumb.
WHAT YOU NEED TO DO?
Slice sausage into sections (about ¼ inch thick slices). Remove tails from shrimp if they are still on. Shred and/or Chop chicken into 1-inch pieces.
Add sausage, chicken, bell peppers, jalapeños, chicken broth, tomatoes, minced garlic, cajun seasoning, and salt and pepper to a pot. Bring to a boil, cover and simmer for 20-30 minutes. Stir in riced cauliflower and cook another 10/15 minutes.
Stir in shrimp, re-cover and cook for another 15-20 minutes.
Sprinkle with chopped cilantro or parsley if desired, and serve hot.

We are traveling to visit family on Thanksgiving day and will enjoy some gatherings and I will no doubt be out of my routine.
But while there are things I cannot control – there are things I CAN control.
I’ve already prepackaged my vegan superfoods – combined with digestive health boost (c’mon my traveling friends, you know this is needed) and the power greens boost, because well not much of Thanksgiving dinner screams GREEN. But I want to make sure I am still getting my nutrition in…PROBLEM SOLVED.
I will choose the foods I LOVE and let the others be.
I may enjoy a sweet treat, if I’m feeling it.
Perhaps I’ll sip a glass of wine.
Time will tell
But I will tell you I will not feel like I am stuck on a DIET, I will choose and do what’s best for me and I couldn’t task for a better sense of satisfaction in my own skin.
I mentioned last week I was starting Intermittent Fasting and after 7 straight days of it I am happy to say I DIG THIS STYLE!
When I first heard of the idea of “fasting” for a portion of the day and not immediately eating post-workout I got a little nervous. I didn’t THINK it would be in the cards for me but honestly when I broke it down it ended up making my mornings EASIER.
Typical morning:
I would wake up,
Drink my energize,
Workout,
Get showered and ready,
And amongst getting the two minions up, fed, dressed, ready for school and out the door I would shovel something in or sip my shake during the crazy.
Now – I just get all that done and when I come HOME I make my shake and enjoy my breakfast.
Here are some of the fabulous meals I enjoyed last week!
I’ve been generally fasting for 16 hours with an 8 hour eating “window”
Here’s an example of what my day looks like:
Sleep 10:30 – 5:30
5:30 Wake up, down energize, workout @ 6
9:30-10:30 Break – the – Fast
12:30ish – Lunch
2:30ish – Snack
5:30 – 6:30 Dinner
There are two main things I’ve noticed:
I am no longer sneaking a bite of the pancake or soggy cereal that the kids leave behind – nor their fruits and veggies that I would normally think of as “freebies” – #IamNotAGarbageCan #LessonLearned
I am not mindlessly snacking late into the evening
Those two little things are going a LONG way!!!

Spray baking pan with olive oil (I prefer the foil tins to make clean up easier! But you can also line a 9×13 pan with foil and spray the foil)
Combine all ingredients
Bake at 350 degrees for 30 minutes or until sides begin to crisp and middle is cooked thoroughly
For the portion fix portion sizes:
Makes 6 servings: 1 red, 1 green, and blue depending on the cheese/avocado
I made a second pan for my husband using 16 eggs and adjusted the veggies to be 4 red peppers and 4 cups of spinach to give him 4 servings – each of which included 2 reds and 2 greens.
Note you can make any changes you feel necessary to this recipe – i.e. take out the onions, add in some mushrooms, etc…
My goal was to create a flavorful breakfast that would be several servings and include a protein-veggie-healthy fat combo. This most definitely did the trick!
These egg dishes were part of a weekly meal plan and prep session my husband I did on Sunday to help us stay on track with our health and fitness throughout the week!
I’ve been sharing and talking publicly about the 30 day elimination plan that I began with some of my friends on November 6th but I haven’t yet taken the moment to share with you WHAT it is or WHY I’m doing it and with the recent questions I’ve received I realized it was best to just lay it all out there!
So here it is!
This is not whole 30, this is not paleo, this is not a portion fix plan and this is not vegan.
This is ME noting what works best for ME.
Over the last 3.5 years I’ve been making my own health and fitness a priority. I’ve followed a variety of programs and as I progress and as I try new things I’ve noticed some things that used to work for me don’t anymore!
For example, a loaded yogurt bowl used to be part of my DAILY routine. I looked forward to it every morning! The greek yogurt with some fresh berries, a drizzle of honey and some crunchy almonds to top it off! But over time I noticed my skin was breaking out like crazy.
I didn’t think I ate “a lot of dairy” but when it was suggested to cut it out I noticed improvements almost IMMEDIATELY.
That was the first eye opener! And with that, I began noting how different foods impacted my skin, my sleep, my energy levels, my cravings and I found:
Through my own experiments over time, I found I feel my best when I am: Grain free, gluten free, dairy free and (limit) my sugar…so that’s my 30 day PLAN!
Now those who know me know I love a good cookie and I don’t ever plan on cutting out cookies entirely but I am no longer including them daily and after 8 days no cookies I am proud to say I am not just surviving but THRIVING.
I kicked off my 30 days with a 3 day refresh. Not because that’s what everyone else was dong, in fact I don’t think anyone else in our accountability group started that way but after wrapping up a trip to Florida, London and then Vegas in a 5 week span – my body needed a JUMPSTART and this always does the trick!
3 Day Detox Results
I can’t really say that I lost any certain number of pounds because well, it was one heck of a morning in our house upon completion and I just never got there #momlife but I lost the BLOAT.
I needed to break the bad habits and this was exactly what I needed to kick it into high gear!
Oh, and don’t mind the instant tan- it’s just the difference in light I was standing under-that did not come with the detox. #sorryfriends

I’m splitting my daily caloric intake into 4 meals. I’m not eating LESS I’m just eating specific foods that I know help fuel my mind and my body for optimal function!
Meal prep has been KEY for me to stay INTENTIONAL with my choices and make sure I don’t find myself caving later in the day!
Last week was the warm up.
This week kicks off my first go at Intermittent fasting.
I don’t have all the answers but I am willing to give it MY BEST not just for myself but for my challengers and those that allow me to be a part of their journey!

From the time she was a baby fruits and veggies and protein of any kind were a no go.
Pretty much non existent…and trust me it wasn’t for a lack of trying.

Day by day, you’ll feel like you’re part of the action – following along with Autumn and the cast and they progress through the program.
How long are the workouts?
The workouts are intense and average 45 -60 minutes.
Does the nutrition plan follow the container system?
The nutrition plan does incorporate the portion fix containers but not how they were/are used in other programs. You will be following a professionally calibrated macro-timed-nutrition plan with specific meals/containers/types of foods to eat at each point in the day.
The nutrition plan will follow the portion fix nutrition containers that have been used in other programs like Shift Shop, the 21-Day Fix, Hammer & Chisel, Insanity Max: 30, etc…
But rather than looking at a total allotment for the day you are provided with specific breakdown of what you’re eating and when including specific pre and post workout meals.
You are eating at specific times of the day and you have a pre and post workout meal.
One meal a day can be replaced with Shakeology and use of the Beachbody performance line is highly recommended. The energize is my magic mommy go go juice for my pre workout, the hydrate is during the workout (think benefits of gatorade without the sodium, sugar and artificial flavorings), the recovery is post workout (and the key to being able to get up and crush the next day’s workout) and recharge is what I drink 30 minutes before bed (to help speed up muscle recovery and sleep!) and this combo helps you get the most out of your workouts while optimizing results!
What can you do NOW to prep for the January release?
First off you will have an opportunity to preview the program with: A Little Obsessed:
A Little Obsessed workout program is a 5-day introduction program to prepare people for 80 Day Obsession. These workouts are shorter, easier versions of the 80 Day Obsession program and will include a 5-day meal plan and calendar.
Here are a couple of important dates for A Little Obsessed to keep in mind:
• November 6 – November 10: A Little Obsessed will be available exclusively to Beachbody on Demand members as a live stream event. This means, starting on November 6, each day’s workout will be available for live stream at 9am PST and stay up for 24 hours for only BOD members to try. A total of 5 workouts will be available – one for each day between 11/6 – 11/10.
Due to popularity – A Little Obsessed will repeat the sneak peek the week of 11/14 – 11/18.
• December 20th – January 14, 2018: A Little Obsessed will return to Beachbody On Demand, so everyone can try it out and ramp up for the launch of 80 Day Obsession.
It will be in home page of beachbodyondemand.com, so you can try it FREE, even if you aren’t a member!
